A Misono would be ideal but I’ll consider any carbon mono steel.

WTB: 180mm carbon mono steel gyuto

I’m looking for a smaller -probably 180- carbon mono steel gyuto, either handle style with a slight preference for yo, hopefully well under $100.

Examples would be Suisin carbon steel 180, Misono Swedish... Let me know if you have something!

MTC Kitchen sells a Takamura “HSPS Pro” line that is significantly more expensive than the Migaki R2 line that’s more familiar. I think that must be the same line.

To be clear, cutting WITH the grain is how I’ve gotten some chips. The blade sinks right in and a little lateral pressure causes the chips. Happened 2-3 times.

I have an edge grain board and if I’m not careful to cut across the grain with my more acutely sharpened knives (e.g Takeda and Makoto grinds), push cuts and chopping cuts can easily stick in the board. I’ve had some small chips this way.
