I'd give the Gihei a little time to restock. It is a crazy good knife at such a great price, best $120 I ever spent!
Seconded since your dad likes the Gihei 210. It’s called a tall petty but it really is a cool little gyuto.

I like it if it has bars underneath for a continuous mag surface as opposed to a specific number of points where knives can be placed.

Re: Naniwa vs Shapton stones.

Can’t offer views on a comparison as I don’t own any Naniwa stones. There are far more experienced sharpeners than me but if you wanted 4 Shapton Pro stones, I would drop the 8k and get the 2k stone as this would be a good finishing stone for some German steels and I really like to finish suji’s fo...

FWIW the Kanehiro this guy sold me was the cleanest -and sharpest- used knife I’ve bought.

Re: Flattening stones

I have a “stone fixer” similar to the linked Naniwa item that I got from MTC in NYC. Overall, for $20 it does the job but loads up quickly, needs to be dried after use (all my stones are splash and go so this is annoying) and for $30 the CKTG 140 plate (which I just got myself) is just way more vers...

Re: Spa treatment for an abused cutting board

While we're at it, I have a similar (end-grain) square board w/ four feet that is not abused, but has warped in the center. I.e., the center has dipped and is now lower than the edges. Does anyone have a suggestion on rehabbing this poor thing so that it'll be flat again? I've tried applying beeswa...

Re: Caring for AS Clad knife?

I was super concerned about the same thing but when I finally got a knife with carbon core steel I found it was a total non-issue -at least for me. I typically let the knife sit for 5 minutes if my hands are full, have not had any problems. Fussing with the edges (“just how sharp can I get it?”) is ...

Re: Sharpening/honing on the fly.

I guess what I was getting at is the technique of sharpening. I enjoy taking something seemingly unrelated to a blade and putting some life back into an edge. I often do this on someone else’s blade when it’s dull and they are having trouble cutting. A few swipes of magic and their knife is working...

Re: WTS 2 240mm Knives.

Kanehiro AS Gyuto 240mm- Rarely used and I feel that its disrespectful to blacksmith that made this. So I want it to be put in used. Only did touch up once. It's is lubricated with Tsubaki oil to avoid rusting. I do believe I have the box somewhere that came with. Looking to sell for $230. Omg 😮 Kn...

Opinel #8 I picked up in France 23 years ago. Kept walking by a little window display near where I lived for a couple months and one day went in and bought one. Never expected to but I carry it everywhere.

Re: Shapton Glass 220 thoughts

I have one of these “stone fixers” I picked up before I realized a coarse diamond plate probably would have been a good solution. Curious re whether there’s any drawbacks as a flattener for other coarse stones -it seems to be working well so far. Also curious about using the back as a low-grit stone...

Re: Takeda Nakiri Review

I have had a similar experience with the Takeda banno bunka, which looks very much like the nakiri. The relative thickness behind the edge has in some instances had me bearing down a bit too much in order to overcome the wedging and the edge has been biting into the board. It’s been worst when I’ve ...

Re: How Did you get into sharpening ??

Reviving a dormant thread here. I grew up in a rural home with an ethic of doing things yourself and a lot of tools around including oil stones, but never had anyone show me how to use them and never had any luck when I tried. When my wife and I bought a decent Wüsthof chef’s knife I had it sharpene...
