Looking for a shallow egg pan
I’m looking for a pan -10”- 12” with very shallow sides, like a crepe pan specifically for frying eggs. My present kitchen is pretty well set up - I have about 10 all clad pieces that suffice, but flipping eggs over easy is a task because the spatula needs to overcome the pan sides. I can’t believe ...

Re: Need some reassurance
Not really worried about removing enough material to force a blade into retirement, I just don’t want to make more work for myself in the future. I have actually forced a blade into being completely restored by improper sharpening, though. It is a Henkel 4-1/2” parer and by avoiding the bolster, I g...

Re: Need some reassurance
Two heavyweights giving a clinic there. Nice... As a machinist, I’ve worked with various materials, but can count on both hands and feet the actual number of kitchen knives I’ve sharpened. I do, however consider repeatability to be the single most important element of sharpening these knives. Mainta...

Re: What did you cook today?
Believe it or not, if you add water, just spritz it, say a tablespoon at a time every 3-4 minutes or so in a covered pan, that skin will crisp right up.

Re: Damaged knives
My guess is the chips earlier in the thread, the OP’s has its genesis in the original ingot. Interstitial malformation due to silica, hence the whitish appearance, and can only be corrected by taking the edge back down with some rather serious grit. I don’t think these abnormalities are due to any h...

Re: Those hard questions
If you have 18 gyutos and a mountain bike, you can stab someone in the woods while you’re going 40 mph. If you have 20 gyutos and no mountain bike, you can still stab somebody in the woods, but even if you’re running full speed, you can’t be going much faster than 15mph unless you’re Usain Bolt. The...

Re: America’s Test Kitchen
I’ve seen easily over 100 hours of their program. Their approach appears to be exhaustive; they often cook dozens of copies of recipes with small variations until they feel confident to air the final product. I still cringe occasionally * I don’t do that* or “damn, that’s a lot of cilantro”, but qui...

Re: Chef Knife made from 9/11 Building Steel
Wow.... Tactless...Shockingly improper and reprehensible. I don’t care if this was supposedly sanctioned by the NYFD. Something along the lines of 2,000 people were vaporized in that atrocity, and I’m doubtful that their survivors would approve of this. Would it be appropriate to brick up one’s pati...

Re: White steel vs. Tomatoes?
I don’t think it has anything to do with the steel, I think it has everything to do with the fact that you are cutting one of the most difficult food items that exists. Depending on the variety and ripeness, they really need a serrated blade to do them justice. I think your observation is subjective.

Re: Japanese versus western handles
Excepting the hygiene issue, the wa handles are far more comfortable for me, and for everything OTHER than butchering a raw chicken, I’m using a knife with a wa handle. I like the balance and I really like the look of a KU finish coupled with a nice piece of wood.

Re: Japanese versus western handles
I’ve had one wa handle come off from washing, and I was being really careful. To me, it’s not worth the grief to scrub a wa handle. I specifically use a western handle honesuki for chicken, and it works really well, and I think I paid $60 for it. As far as I know, no one I’ve ever encountered has ev...

Re: Japanese versus western handles
I think at last count, I own 14 J-knives, and only four have Western handles, but all four are task specific. I like the balance of the J-knives with the wa handle. That’s an obvious plus, but the glaring deficiency with the wa handles is their problem with harboring bacteria. I never cut chicken wi...
