I’m looking for a pan -10”- 12” with very shallow sides, like a crepe pan specifically for frying eggs. Believe it or not, if you add water, just spritz it, say a tablespoon at a time every 3-4 minutes or so in a covered pan, that skin will crisp right up.

My guess is the chips earlier in the thread, the OP’s has its genesis in the original ingot. I don’t think it has anything to do with the steel, I think it has everything to do with the fact that you are cutting one of the most difficult food items that exists. Depending on the variety and ripeness, they really need a serrated blade to do them justice. I think your observation is subjective.

Excepting the hygiene issue, the wa handles are far more comfortable for me, and for everything OTHER than butchering a raw chicken, I’m using a knife with a wa handle. I like the balance and I really like the look of a KU finish coupled with a nice piece of wood.
