Knives with the reverse tanto tip are cool, you can use them for a lot of things. I don't own a bunka but I do owe a double bevel kiritsuke and it is awesome. Not off the top of my head, try to Google it. I am sure there are some out there you may just have to look a bit harder. Is there a reason the the 14inch won't work for a 12 inch knife? Before getting into j knives I would hone a 9inch henkles on a 10inch rod and it worked fine.

I usually allow my knives to patina on their own, I have forced a patina on a few knives that were very reactive to avoid food discoloration at work. An hour of a vinegar soak sounds like a long time to me. I have never used vinegar, I use watered down mustard and allow it to sit for about 25 minute...

I don't know too much on the subject. What I do know is that the sound a knife makes when you ping it as well as the feedback on a board has to do with the construction.
