Re: Sushi Knife for Long Time chef, First Time Sushi
Unfortunately I have run into some financial difficulties the past week; my basement flooded and I have had to replace everything in it including the deep freeze. I probably won't be able to afford the knives any time soon, however I will keep the knives mentioned in mind for future shopping. For n...

Re: Sushi Knife for Long Time chef, First Time Sushi
Awesome, thank you! We are going to be checking out a new shop that opened in the area soon, maybe I will be able to convince him to tell me his thoughts on those knives, or similar ones they have then I can get to the shopping.

Sushi Knife for Long Time chef, First Time Sushi
Hey all I got such a good response in the sharpening thread that I thought I should ask the other question that is burning in my mind. See, my cousin is the one who got my into cooking, he gave me a paring knife and a sharpening stone one year when I went to visit and that was something that I was a...

That looks really cool. I would want to go and shave in the wilderness in the middle of winter with that blade.

Re: Mobile Sharpener for food stand
I have been looking at the GladsStones, I think they would serve me very well. I am going to be putting a list together of everything I need and ticking it off as I go, mainly the 1K Atoma and a set of beginner Gladstones. Thanks for the recommendation everyone! Sorry - I corrected my typo - they a...

Re: Mobile Sharpener for food stand
So I could use some clarification on two points: Theft issues. Is there a high probability that if a stone is left either on the surface of the cart or inside it, that it WILL be stolen? Will it be left unguarded? I was going under the assumption that theft was a high probability event. If you have...

Re: Mobile Sharpener for food stand
Hmm, I think a good set of Atoma diamond might be my best option. I will be bringing some good steel with me so I would like to keep it in good shape. I will have an area to store them plus the cart will be kept inside when not in use so the theft of plates would be a non issue I think. I will now b...

Mobile Sharpener for food stand
Hey all you sharp people, thanks for welcoming me onto your forum :) I am going to be opening up a small food stand next year while I do some travelling in Asia. I was over last year and got my stand set up including the hot plate, knives and storage containers but after talking with some friends wh...

Re: Separate cutting board for meats?
I use a plastic board for meats, and so easy cuts on one side then hard cuts (like ground beef) on the other side. This way the one side of the board gets cuts in it but that side is not used as much. And yea as most people saw wooden board for vegetables.

Re: 11 tips to be a better cook (if it fits)
EVOO is not worth it for the most part. If you are doing any marinates or using it for a small drizzle then it is okay, but for cooking it burns too fast and impacts the taste of the food too much IMO. I prefer to use cheaper, pressed olive oil for cooking and save the expensive stuff for special di...

Re: Action of knife when cutting sandwich
I Like to use a curved blade and slice through like you would use a traditional pizza cutter to cut a pizza; hand on the spine and put pressure on the point, then roll back onto the plunge. I find this works best for big bread and baguettes though.

Re: pies
After spending a couple years in Asia I learnt to use a cleaver to cut and serve cake. Well, I learnt how to use a cleaver to do anything but cutting cake was something that was better than my previous methods.
