Re: Show us your new handle

Picked up a couple of Daovua Leaf Spring Kogatanas as Christmas presents. Decided to wrap the handles in paracord. Not sure if this counts as a "handle".

Re: Looking for a Workhorse for Melon and Pineapple

I also like the Anryu for melon and pineapple. But for under $100, the Victorinox 10 in Curved Breaking Knife is my choice. The blade shape is surprisingly useful on melons.
Cant find it on CKTG so I linked to Amazon.

Re: Leather Sheath for Rods (as a strop)

Thanks for the replies. Used it again this afternoon. It won't replace my CKTG strop kit. But It's definitely a feasible "On the go" Solution. Ken: I have some CKTG Diamond paste. But, I think the paste will be a little too messy in the knife bag. How are the emulsions different than the s...

Leather Sheath for Rods (as a strop)

Recently ordered an Idahone Fine Ceramic Rod and a Leather Sheath. The Idahone works great on my Victorinox fillet knife. Today as an experiment, I grabbed one of my Japanese knives (a knife I would never "steel") and used the Idahone with the leather sheath on, as a strop. Just a couple o...

Re: Favorite steak and how you cook it?

Favorite = Ribeye or T-bone
I like keeping them in the fridge, uncovered on a cookie rack for a couple of days. Flipping them every morning.
Salt-and-pepper.
Reverse seer over charcoal.
Finish on a hot soapstone.

How do you "finish" your knives

Hello all. Question about how you all “finish” you’re knives. What is the last stone you use? Do you strap? Do you prefer a “toothy” edge, or work towards a mirror polish? In the past, I have regularly worked my way up to a Shapton glass 8000. Then balsa wood strop with 1 micron paste, leather strop...

Re: All hail the mighty Anryu.

Hello all. Longtime forum reader here. Made a few posts a while back under a different username that has somehow disappeared. Anyway, Anryu was also my first J-knife. Still absolutely love it for root vegetables. Jobone, cabbage! I always reach for this knife for processing cabbage. Mark, I totally ...
