The Sakai Takayuki VG10 Damascus is a good knife. The is a very good Japanese knife dealer within Sweden and several within the EU. You are not going to destroy a knife learning to sharpen on stones. Not my whole kitchen, but finally got this area set up like I wanted. I built the prep table out if 2x4s and fir tongue and groove flooring. Just got the Hi Soft board today. This whole space was previously unusable in my apartment kitchen, now it will be the most used. Fantastic Drew! We need more...

My Konosuke W#2 300mm Suji has a crazy cool ring to it! My Marko 52100 240mm Gyuto has a pretty nice ring too.

I use this technique too. I find I'm more consistent if I'm not adjusting my pressure while moving back and forth.

That choil shot looks awesome, very thin behind the edge with some nice convexing! You guys will have me buying one before it's over, I'm already a Harukase fan anyway! :geek:
