AEB L steel worth investing over carbon?
If you like or want a stainless knife AEB-L is a good choice.

Re: Makoto AS 210mm Gyuto

Such a great looking knife, some nice chiseled kanji would just REALLY set it off! I was thinking the same thing Jeff! Chiseled Kanji and a bit of refinement to the polishing/finish below the shinogi line and this knife would be an absolute stunner! Perhaps he has plans for a more expensive line in...

Re: WTS Saji Rainbow B#2 Damascus Gyuto 240mm Like New

I just don't understand how this is still available. I have a saji ginsan and love it, and this looks like 10x the knife of that. He shouldn't have withdrew it the last time he posted it, I was about to jump all over it. I've bought a couple knives since then and have a couple trips coming up and d...

Can't believe this knife is just sitting here at this price! What more could you want or get for $215, chicken feed for a knife of this caliber!

Is this an issue with naniwa stones if I use them as splash and go? I got great edges without soaking them at all.
No it's not. The don't need to be soaked and should dry in 8-12 hours.

Re: Steels picky with specific grits.

I agree, it does a good job on Euro stainless, but not any better than my SP2k. I have several Victorinox knives and my SP2k does as good or better job on them as the GB. As before, I'm not saying it's a bad stone, I just don't understand the mythical magnificence about the stone. To me it's just a...

Re: Steels picky with specific grits.

The Green Brick of...meh. I just don't get it. I've bought one on two different occasions trying to figure it out but I just don't get the hype, sold both of them. I figure it has to be me has because of the cult following it has. It's not a bad stone but give me a SP2k over the Brick anyday. --- I...

Re: Stone Care and Drying Time

I wash and put all my stuff in a collapsible lid holder and leave overnight to dry. My stones are splash-n-go, soakers will take at least a couple days to dry out completely. There is always the exception but stones cracking is rarely an issue. Drying in the sun or oven is definitely a big no no. ht...
