And about the Harukaze, can anyone comment on the food release? It's "OK" but no better than your Kohetsu. I could go up to 300 for my big knife seeing as how it’ll do most of the work... ...I use VCI paper on all my carbon blades... VCI paper should be changed out at least every year I believe. Most places I've read say that VCI paper will protect over two years and has a shelf life of up to 5 years. I'm sure the environment in which it is used/stored has an effect on this though. ...
