Very nice collection!
Thanks! Now I am trying to decide what to keep or let go... so hard to let anything go even for the ones I don't use so much. What an expensive hobby, haha.
Which is exactly why I'm at 3 dozen or so knives and counting... :?

Re: Retexturing a Stone

Thank for the response Peter and I'm not surprised to be honest. I can't say I've experienced a stone that appears to lose it's bite other than loading while sharpening. I have only recently come across this theory of needing to "retexture" a stone and thought I'd explore it a little further incase ...

Re: Show us your knives!

I'm a home cook who accumulated enough knives lately that it's fair to say I have a collection. I thought I would share it here and update now and then as it evolves. A few years ago, I bought a Masamoto VG as my first Japanese knife, which I found impressive at the time and still use for rougher t...

Re: Daovua knives?

So, I am torn between the bunka and the nakiri... Which would you recommend for a home cook who wants to try Japanese style knives for veg prep only. I have mostly german/ Wusthof blades now. Personal preference, go with your gut, both will get the job done. You'll get several very knowledgeable pe...

Just means it's time for a thinning. Thinning the knife will expose more core steel.

Retexturing a Stone

Hi Peter, I've been finding more threads about sharpeners saying that your stones need retexturing beyond just flattening. The context being that beyond just keeping them flat, your stones can become less effective over time and need to be resurfaced to restore their efficiency. I would love to hear...

Well all I know is the Makoto White#2 Gyuto that I bought when they came out is probably the best bang for the buck knife that I have ever bought. Outstanding performance at a very reasonable price.

Re: Newest knife

Has a crazy thin grind and performance is spectacular. It is a beautiful knife in person, pictures just don't do it justice. The R2 steel is stainless but it holds it's edge for a crazy long time. Has and above average stock handle and excellent fit and finish. Just hard to go wrong here. Kurosaki R...
