Really excited to have gotten my hands on a Devin Thomas Stainless Damascus gyuto! The pictures really don't do it justice (especially ignore the part where I "tipped" the knife in the first picture  )
Very nice Ethan! One of my unicorns... :ugeek:

My first knife of the year, I've been good lately! :D Bought the 215 last spring and
fell in love with it so I went back and got the 245 before the prices jump.

Love me some Mazaki! 8-)
This is from CC, I reckon?
Yes it is.

Re: Flattening plate question

Use less pressure on your higher grit stones. Your diamond plate will "calm down" some too as it's "broke in".

Re: Konosuke FT Finish/ Refinish

Well it would seem if you don't want to lose the original finish you just can't use the knife.... :D

I have to say that I haven't used my FM yet because I love the finish so much! I am using
my 150 FM petty, and love it, but it was hard to use it the first time because it looked so cool!

Re: Masamoto KS 240s and 270s Soon

Is there anything that actually came close to being similar to this? The matsubara certainly wasn't in my opinion. Honestly, no, not really, lots of makers have tried to do similar shapes but usually failed in one of the other categories that made the KS a great knife. Either distal taper, grind or...

Sorry for the misinformation about the weight just an oversight.

It's generally speaking but Mazakis run around 5mm long, but nowhere near 10.

Re: To sheath or not to sheath...

What exactly do you mean by sheaths?

I use edge guards or sayas for regularly used knives that are stored in a drawer. For long term storage(a month+) I use VCI paper and/or a light coat of camellia oil. These knives are generally stored in a dining room buffet in their original boxes too.

If you have time to wait I think this knife would be great! https://www.chefknivestogo.com/kaanasgy24.html It's visually stunning in person. It does have a Blue carbon steel core but is not very reactive, stainless cladding, and it won't require any crazy maintenance to keep its appearance and quali...

Ha ha, I just pulled the trigger on the Gihei, then came back to the forum to post that, and saw your reply Mark! I have no doubt that the Kanehiro is a nicer knife in many respects, but I bet the Gihei will not disappoint, and now I have a few bucks left to go toward my next knife! Thanks to all w...

Re: Masamoto KS 240s and 270s Soon

Is there anything that actually came close to being similar to this? The matsubara certainly wasn't in my opinion. The Richmond Ultimatum series had the true Sabatier profile with arguably better steel, and once thinned were better knives than either But that's the caveat, the KS didn't need to be ...
