I'd just keep on using it for now and see how it goes before going through all the hassle of stripping and reseasoning it.

Re: New Request

My Konosuke W#2 300mm Suji has a crazy cool ring to it! My Marko 52100 240mm Gyuto has a pretty nice ring too.

See what you all have done to me, I'm standing in my kitchen tapping all my knives and my wife is looking at me like I've lost it! :?

That is the thing about sharpening, there are many roads to get you to the same place. It's all about finding that road that works best to get YOU there.

...my pressure is pretty much the same on the leading and trailing strokes. I do a few very light edge leading at the end of each stone.
I use this technique too. I find I'm more consistent if I'm not adjusting my pressure while moving back and forth.

Damn, I would have snatched this up in a second! I might let you snatch it up in a few weeks, after I've scratched my Kurosaki itch :P Then again, it looks like such a nice knife that I may just have to get rid of a few things on the magnet rack... If it doesn't shake your tree let me know.

I am a Harukase fan. I've used a couple of them for testing and they are an excellent knife for those on a budget or just a good bang for the buck if it fits your needs. I recommend them a lot, they punch much higher than their price point.

Mark, have you considered listing weight in grams --either alongside or in lieu of ounces-- in product pages? As many (most?) people here would acknowledge, the generally used units of measurements in this realm are mm / gram, rather than inch / oz. Often I look at a product page and find myself ha...
