I've tried switching hands but I seem to wobble much more with my left hand. I do need to use my left hand more just get it right and make it feel more natural. It is something that would add more versatility to my sharpening.

I think you'll be OK but It wouldn't hurt to keep a sheet of VCI paper in the bottom of the drawer or a desiccant. Check your knives regularly for a while, if the cork absorbs moisture you can get a rusting problem.

Tim Johnson made these for me in AEB-L. Get crazy sharp and holds a great edge.
Steel is very tough too. I gave one to a friend and the other two to my brothers.
