He's had 3x11 leather in the past, I own one I bought with an HA strop base he used to sell. Everything 3x11 works better to strop on over 3x8 when it comes to 10"+ knives.

All the knives you mentioned from Anryu, Masakage and Makoto are great selections. Kinda comes down to what is really calling your name.
The Konsuke MM is a very good knife but will require some extra care if you're up to it.

The Koishi is an excellent knife. And as far as fragile, it's like any other J-knife. You are not going to hurt it unless you abuse it. The Makoto is another great knife that will hold its own next to the Koishi. The only advantage(to me) it has over the Koishi is the fact that it is $100+ cheaper, ...

Yes, the acid from tomatoes can start to dull your knife that fast. Especially with White steel which doesn't have impressive edge retion to begin with.
