With the described tasks I go at least 270mm.
I like Shindo better than Kohetsu for the grinds but 240mm would give me pause.

That chip isn't bad at all. You can just keep using the knife as usual and ignore it and the chip will disappear as you do your normal sharpening. If it bothers you too much you can take the time to sharpen it out in one session.

After reading Stainless, Damascus, Wa handle and edge retention, Shiro Kamo was the first knives that popped into my head. Great knives but the inventory is a little thin right now.

The pictures scream santoku even though it's listed as a gyuto. It doesn't look like it's 240mm in length either but it is just a picture. Just thought it might need some double checking to be sure everything is kosher and not the wrong pictures.
