Re: Which suji would you pick and why

With the described tasks I go at least 270mm.

I like Shindo better than Kohetsu for the grinds but 240mm would give me pause.

Re: I didn’t believe it.

Update contd. Next I pulled out a Shapton M5 12k stone gifted to me by a friend. It has some wicked gouge marks that suggest an otherwise undocumented encounter with great frustration. It gave a streakier finish than the preceding Chosera, even after I’d cleaned it as well as I could. So I pulled o...

Not sure where you purchased but Mark was charging $300-350 for these blades back in the day. I can't seem to include photos. The Insert Images button is not working. One can find photos on Kitchenknifeforums.com. I have included the receipt for skeptics but that is what was paid. In Full Editor &a...

Not something you need to worry about, that chip isn't going to damage your stones.

Re: Is this knife toast?

That chip isn't bad at all. You can just keep using the knife as usual and ignore it and the chip will disappear as you do your normal sharpening. If it bothers you too much you can take the time to sharpen it out in one session.

After reading Stainless, Damascus, Wa handle and edge retention, Shiro Kamo was the first knives that popped into my head. Great knives but the inventory is a little thin right now.

Re: Sujihiki recommendation, please

I have a Konosuke W#2 300mm(discontinued) and like it a lot. Most of the time I'm glad I have a 300mm but most of the time a 270mm would get the job done, we're talking about a difference of barely over an inch. I will also say that it is handy to have something like a 150mm petty/utility knife to b...

Matsubara Blue #2 Nashiji Sujihiki 270mm

Half way through the last paragraph the suji is listed as 240mm.

Re: Typographical errors on the site.

The pictures scream santoku even though it's listed as a gyuto. It doesn't look like it's 240mm in length either but it is just a picture. Just thought it might need some double checking to be sure everything is kosher and not the wrong pictures.
