I would never call my wife a favorite kitchen item! :o That's why I tell her to stay out of the kitchen when I'm in there trying to cook. :D
OK, I'm going to the truck now... :(

Digital Scale. Does grams and ounces. It gets used for everything from measuring coffee, to burger paddies and used to get used for baking. Even use it to weigh baking soda for the correct ratio to water to clean corrosion from lead acid batteries. Not to mention weighing packages to get shipping r...

Re: Konosuke Updates

"...an increasing number of ' people ' purchasing our knives for the purpose of resale." Kosuke seems to clearly be addressing the problem of flipping by end users but I don't see how a "pre-registry" would stop this. Once in the hands of the customer anything can happen. An adeq...

g...I just noticed when looking at "new arrivals" across the 4-5 resellers I frequently look at -- that a lot of the "new arrivals" are VG10. Then I thought to myself that if VG10 was so bad then why would these makes use it....so that led to me posting here where I knew I would...

Re: Knife Recommendation: Flat Profile Gyuto

Also would give the Ogata 240mm a recommendation. His profiles tend to be taller and flatter than average, and they just got restocked recently I believe, so I'd definitely give it a peek. Having tried a couple of his knives so far, he's impressed me with OOTB sharpness and how practical his migaki...

Re: VG-10 Steel

VG10 is generally dogged by the "steel snobs" in the hobby. It is a very good steel for kitchen knives with much better edge retention than it gets credit for. The Tojiro DP is a VG10 knife that has been a staple in pro kitchens for a few decades, there is a reason it's still around. As fa...

I was trying to think of a way to not use heat...
Your not going to get the knife near hot enough to damage the heat treat if that's a concern.

Re: Handle Install Advice

This may be absolutely silly, but I thought about the expanding insulation foam since it hardens, has glue-like properties and is expanding. Little shot through the needle straw and you're done. I dunno, maybe. I agree with the "absolutely silly" part. That stuff would have the potential ...

That's how I marked my blade for the proper depth, like you, meant to mention it but forgot to bring that up!

Still turned out nice Joe, good job! Though I never doubted your results would be anything but steller.... ;)

Re: How to improve the edge on my well used Kohetsu

You can see how close the cladding has gotten to the edge of the knife. Thinning the knife behind the edge will move the cladding line back and expose more core steel and bring that knife back to excellent performance.

Re: How to improve the edge on my well used Kohetsu

Just needs a good thinning to bring it back to life. Many more years left in that knife. I usually do a little thinning with each sharpening, only takes a couple minutes. That keeps the knife near peak performance and prolongs the need for a major thinning later if ever.

Re: Does a no ferrule handle have more likelihood of splitting?

This thread caught my attention. I am about to install my own handle for the first time. A guy at a shop told me not to because he said it is very easy to crack the handle (which I do not believe). That said, it sounds like it happens. When you guys write that cracks result from "not drilling ...

Yes it will. If you have doubts, you can always heat a piece of metal with that heat gun and touch a glue stick to it and that will answer your question definitively.

I took a shot at making Easter bread (paska version). Re: Handle Install Advice

I shave hot glue and fill the tang hole, doesn't have to be packed in. Heat the tang with your prefered method, torch or heat gun works well. Push the handle on, check for straightness and let cool. The excess glue that pushes back out of the tang hole trims at the handle easy with an xacto knife or...
