I like the extra pins you did at the front and back, but be careful getting them too close to the edge of the handle. I find that a 210mm petty to be the most efficient knife for slicing things like chicken breasts and smaller loins. For larger cuts of meat I pull out the bigger sujis.
Much prefer using long petties and sujis for slicing than gyutos.
