So, I have CKTG to thank for my family eating healthier than ever. Why? Cause I have a new Nakiri , and I need vegetables to chop lol. Happy cooking!

To sheath or not to sheath...
Any preference from you experts on storing knives with or without the sheath on? Does the metal need to breath?

Re: first time sharpening “good” steel
Well I'm brand new at this and to say the least the learning curve is immense in the beginning. My next move is to go lower grit and leave the stropping until later after reading through this thread.

Re: Diamond paste/grit comparison
Thanks for the info! So, prior to using my 1 and .5 micron balsa strops and then finishing with the bovine strop, what would you recommend being the best set up to that. I've been using the Tojiro pro roll sharpener prior to jumping to the strops, and my knives are getting sharp, but definitely aren...

Re: Balsa strop care.
I appreciate the thoughts. On a different note, do you only use one type of paste per strop, and have like a 1 micron strop and a .5 micron strop? Also, how often do you reapply? If I'm sitting down with 4-5 knives is one initial application enough to last through all of them? lots of questions, I s...

Balsa strop care.
Is there any care required after using a balsa strop other than storing it? Any cleaning necessary?
