Re: Best way of storing knives long term.

Vacuum sealing knives is definitely a concept I'd never heard of.

Won't a sharp knife split the sealing material?

Hmmm. Rereading, maybe you are talking about sealing after wrapping in paper so maybe that is sufficient?

Re: We bought an induction range.

Do smooth glass tops like this get scratched by back and forth movement of a pan? I know I move things around quite a bit when on the stove.

I work for a a company that has a very large catalog and have worked for a number of years in a role related to the production of images for the printed catalog as well as our website. It's with that in mind that I can provide some background/info about how we do it (your needs may vary). Producing ...

Would it be easier to have a filter for the "Show out of stock items" option to be on the Search Results page? For example, the user could just type "Anryu" or "Konosuke" in search and they could just check off the "Show out of stock items" to filter what's a...

Question for anyone who owns the Jones V2 knife block

This is the item in question if the title wasn't clear. Is it solid inside? Or open slotting like V1 ? And if you have it, how do you like it? I've just moved to a new place and despite meticulous measuring of many other things, didn't realize the space under the cabinets makes it impossible to use...

Yes! I make my own but sometimes I stock up on some packets from Kayanoya. Good to have on hand.
That's the brand my Japanese friend recommends.

Maybe some interesting/high-quality instant dashi packets/powders that aren't as available here.

I like making dashi from scratch, but these are good in a pinch.

Re: Field cast iron skillets factory seconds sale

For the following seconds, I paid: $110 for #10 in 2019 $150 for #12 in 2020 Everyone has their own $0.02 on cookware. I re-purchased and sized up so take that as a vote of confidence. I may use my stainless All-Clad 6qt saute a bit more regularly, but that's probably because it has a tight-fitting ...

Re: Magnetic Rack to show off amazing knives

There are two included drywall screws (I forget the size). You drill a hole for each one, sink the drywall anchors, use and use the included screws to mount a small metal bar. There is a cut-out notch on the back of the rack that fits over this metal bar. The same magnets that hold your knives also ...

Re: The Future of High End Japanese Knives

I agree it was an interesting read. Thanks for sharing. One thing that strikes me is Mark's ability to continue to find new products and producers here - either by coaxing someone who makes a related product into trying their hand at knife making or nudging an existing producer to try something new ...

Re: Jones Walnut knife block

Hmmmm. That angle seems pretty high to me. I would think the point of this is to tilt it slightly off the counter to make it easier to grab a knife. There is probably a sweet spot between horizontal on the counter and vertical. While this probably varies a bit based on your height or the height of t...

If you want a nice casual place that is food centric The Purple Pig has some good food and it's fun. It's often packed so going a little off hours would be a good idea. Walk-in only also makes it a tough call but maybe the stars could align. They had a variety pretty ugly issues a few years ago tha...

Re: What did you cook today?

Ronnie I also buy Partanna. I make sure not to push the filler down since it seems to be an iffy design idea to me. I always buy 3L cans/containers of olive oil, but I pour it into a smaller 500ml bottle with a pour spout for daily use and refill as needed. Some use squeeze bottles for this kind of...

Re: What did you cook today?

My friend in Israel sent me a recipe for homemade gefilte fish. Basically, it's like a meatloaf made with cod and salmon instead of beef. It was really tasty and healthy. My oldest kid is preparing for a power lifting competition so dishes with lots of protein are a big hit right now. I don't think...

I bake a little hotter (470) so maybe that's part of it. I'll play around with either the sheet pan underneath or stacking the bottom on the lid.
