I would caution you to reserve judgment on your technique and the knife until you have sharpened it at least three times. I never had an issue until I had an issue with a particularly thin ground Tanaka blue. The edge would chip and roll until I cleaned it up a few times. Now it is a badass. Don't ...

Mazaki nashiji 210 gyuto. Length 219mm, height 50mm, weight 7.9gr. Cherry & buffalo horn handle. Big boi. Hated the handle, so I tried to burn it with a torch. First time I used my new Kohetsu AS nakiri, & I chipped the edge near the tip. I've had GrandSharp (Chinese) & Enso HD Nakiris, & I used this in the same fashion as those. The sayas all are unstabilized and they warp and crack often so we’re not going to sell them to customers. Ha! I ordered a Honesuki from another vendor to get the saya, before I asked this question. I now have the 235 Gyuto, Honesuki, & Tall Nakiri. I'm loving the value you get with these knives, they perform as well as much more expensive knives & aren't bad too look at either. None of the edges were even paper cutting sharp when I received them, but a few minutes on the stones & they're razor...
