Re: Sharpening axe

Rather than using a regular bastard file I highly recommend using a flat raker file... the type used for filing chainsaw rakers. The steel is treated much better for cutting hardened steel on axes. The bastard file works but it will tend to skate on the harder steel and will wear out quickly. This i...

Re: How to flatten #120 whetstone (Extra Coarse)

I have a Pro 120 and I use some 60/80 grit Silicon Carbide powder on a flat ceramic tile for that particular stone. I bought a little tub of the powder at a local stone/bead/gem shop for a few bucks. Works great. For stones 220 and up I just jump back to my Atoma plate. A few notes on the Pro 120......

Re: 800 and 3000 or 2000?

Since you have the glass 1k/4k I'd strongly recommend picking up the glass 500. Sooner or later you will need to drop down to a lower grit and it is a great stone. The 500 will play very well with what you have and it will also speed things up.... a few passes on the 500 before jumping to your 1k wi...

Re: Steel and pocket knives

I carry the Chaparral Lightweight daily (CTS-XHP). For me it is the perfect size and weight. After going through a number of benchmade and other spyderco knives I've settled on this one. The steel has actually really impressed me. It can take a very keen edge and hold it for a looooooong time. The s...

Re: Professional Prep Knife

The Kanehide TK and PS60 knives would be my pick for "work knives". Bulletproof with great steel and good all-around performance for just about any task. I personally really like the TK semi-stainless steel. Low maintenance, great toothy edge that lasts and a super tough "worry free&q...

Re: WTS Sakoda AS 180mm Gyuto

I've been pretty good about only keeping the knives I use regularly. I have been in the mood to experiment with some new makers and new sizes/styles lately though. I have to remind myself that sometimes the "experiment" part means I just need a little more time to adjust to blade length, p...

Withdrawn - Sakoda AS 180mm Gyuto

WTS Sakoda AS 180mm Gyuto This was the "sample" Mark listed for charity under the Ken's Corner section. I purchased the knife to give it a test drive and to check out a new maker to the website. The knife has been used to prep meals at home. I cleaned up the box edge on my Rika 6k but othe...

Re: WTS Takamura Chromax 210

Hi,

It had a surprisingly good edge out of the box. I gave it a strop on balsa with some 3 micron paste and it has been stropped on leather a few times. It hasn't seen the stones though.

Best,
Ben

Re: Micro chipping on AS nakiri

There might have been a little burr or weak steel from factory sharpening. I use my Kohetsu AS as my rough&tough knife and I can vouch for the toughness of the steel. Give it one good full progression and you should be good to go.

Re: Retinning services for copper pots?

enjay- No need to fear the tin! It is like having a carbon steel knife.... with a little extra attention it is no problem. Yesterday I stumbled across this beautiful Lamalle copper gratin with perfect tin for a few bucks at my local thrift store. They do 1/2 price on cookware Thursdays so it was eve...

Re: Retinning services for copper pots?

A hand wiped tin lining should last a really long time in a home kitchen if you treat it nicely. Years and years. I have pans I've used almost daily for 4-5 years without even the slightest hint of copper showing through. I can imagine they won't need tin until my kids inherit them. I think some peo...

Re: Retinning services for copper pots?

Yeah, given shipping costs and your location you might stay on the East Coast. ECT just had a spring special with free inbound shipping if you have two or more pans. He runs specials on shipping pretty often. If that has expired you can use his shipping account via the ECT website for discounted shi...

Hey Dan-
When did you pick up the Ashi 180 petty? I've been dying to see how one fits me in-hand.... I might need to stop by your place for a beer soon.

Re: Retinning services for copper pots?

PS Expect to spend $4-$6 per inch. 2x sides plus bottom to figure a rough price. Most of these tinners have have a quote calculator or will get back to you quickly with a price. Southwest was around $4 and I think ECT is $5 now. It is actually really satisfying to take an old crusty pan and see it b...

Re: Retinning services for copper pots?

I've used East Coast Tinning and Southwest Hand Tinning. Shipping cost is a big factor with copper, so your location might decide for you. East Coast Tinning has been around a long time and has quick turn around. Jim is nice and easy to do business with. I personally prefer Southwest Hand Tinning fo...
