Electric grill...worth it?
Happy New Years! I have a 25 yr old weber propane grill and it's just been sitting like a deck prop. My wife took over the kitchen and no matter what she says I've been elbowed to the side lines. So, that leaves me out in the cold, on the deck. I could clean up the weber, though I expect I'm going t...

Re: Austin knife sharpening service?
Guys, thanks. As Peter says, indeed, it is disappointing! And, in a city with as much money and people as Austin. While we are nuts, fanatics, etc it is only relative to an incomprehensible resistance to take proper care of an everyday tool that feeds us. How basic. Or, as Peter aptly says...there s...

Re: WTS: Sakai Yusuke 240 Wa-Gyuto MONO White #2 Steel
I tried to do a search that goes far enough back in time when Mark was selling this knife. Unsuccessful. This one did show. I might add that the knife has a very nice handle as I prefer the ones that have some size. Re: one knife for work Report Quote Post by maxdgad » Sun Apr 30, 2017 1:06 am On sl...

WTS: Sakai Yusuke 240 Wa-Gyuto MONO White #2 Steel
For sale, 220.00 USD, Shipped in the US included. Mark used to sell this knife. I found a quick look presentation for the 210 gyuto. https://www.youtube.com/watch?v=lylws3GEFgs The 240 version for sale has the same attribute: mono steel construction. Under the name of Yusuke, I am not sure that the ...

Sweet maria....yep, that’s s where I learned about the best way to do the pour over...could be going on ten years . Still use the filters they were selling... better than the brown ones at Whole Foods. The guy does good videos. At some point I did consider buying local roasted beans...too expensive....

Re: Makoto as ryusei 210 or a Anryu as 210 gyuto adivse
Our first j knife was a hammered anryu. Even though I have hand issues, I have migrated from laser like knives to wanting more weight behind the edge. Not only is that about letting the knife do the work, it's also about ....if the geometry is right...less work pushing product apart as it cuts throu...

ok, i'm a coffee lover and this thread is nudging me to complicate things...may be a good thing? Baratza grinder, beehive keetle, v60 pour over. Is this grinder good enough? I hope so. If I was to add something to the line up, would it not be beans roasted fresh? A roaster? Currently, ethiopian bean...

Does vg10 perform as well as r2 when done by the right Smith? I’m asking this for myself since I’m seeing vg10 gyutos with Sanyo characteristics ... a one more knife wish list. Have plenty of good guidance from the board in the event that the tall gehei petty is a hit and my wife’s cousin expresses ...

Re: High end worthy gyuto
Ps....what the heck happened to mazaki? I have his petty and 210 gyuto. I had expectations that he was going to be another kurosaki and build on his initial following. I do feel that he had the magic sauce when it came to geometry.

Re: High end worthy gyuto
Guys, good discussion. If the opportunity presents I have good information and points of view from all. Personally, I like the Kamo r2. And, the kuro vg10 got my attention. I like the specs for myself as I have become partial to the Sanyo region character. And, I know that Tim has increasingly been ...

Saji knives float my boat but how is the function? Gyuto style. Re abuse issues...good point...broke my heart that years ago I purchased a kono long petty for a good friend and he allowed his wife to chip it up big time. This guy knows better as he is an amateur knife maker and affiliated with a pro...

Condiments
We like having condiments in the frig, ready to go for our imagination and next meal. And, our knives are the essential tool. No need for a messy food processor. Lately, the headliner has been an olive tapenade. Two different knives are involved. The 210 mazaki old profile cleans the leaves off the ...

Re: Drop point knife profile and evolving preferences
Mazaki knives still has Yahiko as the information page. Based on my petty which I’ve had for some time from another vendor, I wonder if the Rockwell spec is much higher than as listed. His early handles never do justice to his steel. Too short and not enough girth. Is this still the case? Can’t judg...

Re: Drop point knife profile and evolving preferences
Just received gehei tall petty. I get the rage over this blue 2, even better than my anyru. All blue2 ain’t the same. The geometry and profile is exactly my preference. My point is that I wish there were more similar choices. Would love this smith to have a 200gram gyuto or kiritsuke, 220ish mm, ver...

Re: Drop point knife profile and evolving preferences
My point is that I wish that the low point profile was better represented in what otherwise is an amazingly deep inventory that Mark is always developing. Certainly there is the need to have enough diversity to match different knives with different jobs. Though, I think it does come with the territo...
