Pecan is much harder than maple and other woods typically used for butcher blocks. So it won't be as gentle on your knives for sure.

Wood doesn't work very well in my experience. Cork works a little better. Felt blocks are supposed to be really good too, but never tried it. I use the cork in combination with deburring on the stones. Never get nearly as good results without proper deburring on the stones as well.

There is a reason AEB-L is the goto stainless for makers like Devin Thomas and Randy Haas. Good stuff!

The 240 Anryu B2 hammered is in stock btw. Having learned on a 210, I now almost never use that size, but have moved up to 240 or 270. Lots of people prefer 210 though, its a subjective thing. 240 might allow you to handle bigger products easier than a 210 though. I'd say 240 is probably the "...
