I own a kohetsu AS 270 and its the greatest suji known to man lol But if your looking for something cheaper... The fugiwara carbon suji... Had one in a 240.... yes, I live in Vancouver BC, and Knifewear and Ai&Om is the most famous knife shop here. Ok, seems like Monosteel is way to go then, I'm going to Washington, DC and NY in a couple week. I might see another choice while I'm in there. Maybe if I can get a good deal on Masamoto VG I'll consider it...

My 2 cents Im a pro chef and have been cooking professionally for almost 15 years. Ive used a dalstrong and there perfectly fine for what your gonna do. Now.... You are a somm and a manager whonis looking to be a better somm and a manager... To "talk the talk" better with your chefs right?...

Oh... And did i mention coverage??

Ive COMPLETELY loaded a 3x8 nano cloth strop of each CBN and poly diamond and barely made a dent in the bottles lol

I can load a 3x8 balsa strop with 4 DROPS of either compound.

Yea..... Just sayin

N690 steel... It's almost an analog for vg10.
DMT XXF , KITYYAMA 8K then Ken Schwartz 1 micron CBN on nano cloth...

I use unloaded leather to strop fairly regularly and it works well. You can use an old belt if you have something you want to sacrifice. Use the smooth side. I don't think nano cloth works unloaded. At least not for me. I also haven't had much success with balsa unloaded. My go to strop to finish a...

Is it okay to use strop without the compound? I am merely using it as a burr removal with a bit of an additional sharpness. That way I can keep the toothyness without it being too refined. :?: If any suggestion, give me one. I am looking at Nano, leather and Kangaroo, which gives a better results? ...

I use the same method a lot, felt between stones to keep the edge cleaned up and then just bare leather to finish. Has always worked well for me.
