Re: Hattori HD
I remember ogling them heavily when they first came out. Many years ago because it seemed like a natural upgrade to the HD. I know there’s better out there but I’ve always had a soft spot for them because of Hattori being my first.

Handmade knife.
5D383963-6E1F-40A7-86AD-3F517F8F3F1E.jpeg I just wanted to share a knife I made. The knife bug bit me hard when I was a kid and I began dreaming of making knives. I finally acted on my urge. This is the second one I made start to finish myself. I forged the rough shape from 1080 bar stock and then ...

Re: S Grind
I once owned a takeda and loved it. I regret selling it often. Cool to know I experienced an S grind without knowing it. Convex is what I was shown while taking the class. Full flat is what I tend to use on most kitchen knives these days. What are some examples of knives with a good convex? In my ex...

S Grind
Hey friends, I recently took a class with a local blacksmith on knife making. Through conversation I told him my interest is geared mostly towards kitchen knives. He began to discuss grinds (amongst much more, he was a walking encyclopedia of knowledge). One that came up was S grinds. I’ve never enc...

I’m impressed that there are still salesman making a living by selling these things! I figured it would have died out by the 2000s. Ask them how to get a job. I would be intrigued to hear how one gets that gig.

Re: Sharpening/honing on the fly.
I guess what I was getting at is the technique of sharpening. I enjoy taking something seemingly unrelated to a blade and putting some life back into an edge. I often do this on someone else’s blade when it’s dull and they are having trouble cutting. A few swipes of magic and their knife is working ...
