Using dry does give a different result than wet. I often like stopping on a dry Kitayama 8k. It gives a bit more tooth compared to using it wet. It is a nice, mud free, quick touch up.

I've not been keeping up with the changes in the fuji line. How is this one different? Is it different enough to try it if I didn't care for the previous version?

It could be an inconsistent grind on the blade road. If this is the case, you can be doing everything correctly and see what you are describing. This is not at all uncommon and isn't a problem unless you can't live with it. The "fix" would be thinning the knife to even out the grind on the blade roa...

Sandpaper progression to 1200, 0000 steel wool with uchi mud, 2400 micro mesh with uchi mud. After the sandpaper, it takes about 3 minutes total. Touch-ups take about 2 minutes to get back or less. Super easy to maintain.

The 140 is really all you need. Even the Kit 8k won't act any different if you flatten it with a 140 or a 1200. It will only take you longer to get it flat. If you are lapping natural stones, a finer grit plate will come in handy. For synthetics, I've found it doesn't matter.

My 240 and 270 Toyama both weigh 250g. The 240 has a Dalman handle that is a but heavier than stock but only by 10 or 15g. How heavy is yours Ashy?

I purchased the Anryu santoku for a friend as a gift. While he is not a nut like us, he seems to really enjoy it. I've used it a handful of times and it is a thin, nimble, light knife. I sharpen it for him about every 4 or 5 months and I like the steel in that regard. The fit and finish is a bit bet...
