My 240 and 270 Toyama both weigh 250g. The 240 has a Dalman handle that is a but heavier than stock but only by 10 or 15g. How heavy is yours Ashy?

I purchased the Anryu santoku for a friend as a gift. While he is not a nut like us, he seems to really enjoy it. I've used it a handful of times and it is a thin, nimble, light knife. I sharpen it for him about every 4 or 5 months and I like the steel in that regard. The fit and finish is a bit bet...

Jeffry, I echo your thoughts on the knife exactly. While I'm not a pro, I felt like this is a pro's knife. Great all round performance with a bit of a menacing look. Lots of bang for the buck.

What did you think of the edge retention?

Thin, polish, then sharpen. If you convex all the way to the edge, you can accomplish both sharpening and polishing at the same time, but its difficult to get a lasting edge this way and a microbevel is often necessary.

I have a Yahiko Mazaki as well. It is thinner than both the Toyama and the Wat. I prefer the latter for a workhorse though I really like the Mazaki for a thinner choice with descent release.

Well hopefully there's is a way to get shipping down to a reasonable price......maybe shipping in bulk? It might be better to ask $300 for a stone and advertise free shipping. This is going to be a problem for many people who might take a shot on one of these otherwise. Perhaps myself included.
