Re: Gumbo weather here

Nothing better in cold weather. Not quite ready for that in my neck of the woods. Still mid 80's here. Reminds me of dinner at my Cajun great grandmother's house when I was a child in Biloxi. Filé?

I have a passaround that should be with him as well. Of course, the passaround knife is a very distant second compared to his well being. I just hope all is o.k. with him.

Re: Makoto Ryusei

Somebody should compare them to the Yu Kurosaki laser/ Richmond laser / Suisin Chiku Migaki that are hard to come by. Looks like it is heavily modeled after his brother's popular offering that are out of stock everywhere. Hopefully Mark got a bunch of these as I have a feeling that they will be very...

Sandpaper progression to 1200, 0000 steel wool with uchi mud, 2400 micro mesh with uchi mud. After the sandpaper, it takes about 3 minutes total. Touch-ups take about 2 minutes to get back or less. Super easy to maintain.

Re: Atoma Lapping Plate Advise

The 140 is really all you need. Even the Kit 8k won't act any different if you flatten it with a 140 or a 1200. It will only take you longer to get it flat. If you are lapping natural stones, a finer grit plate will come in handy. For synthetics, I've found it doesn't matter.

My 240 and 270 Toyama both weigh 250g. The 240 has a Dalman handle that is a but heavier than stock but only by 10 or 15g. How heavy is yours Ashy?

Re: Anryu blue #2 vs Kurosaki AS?

I purchased the Anryu santoku for a friend as a gift. While he is not a nut like us, he seems to really enjoy it. I've used it a handful of times and it is a thin, nimble, light knife. I sharpen it for him about every 4 or 5 months and I like the steel in that regard. The fit and finish is a bit bet...

Re: Yahiko White #2 Hammered 240

Jeffry, I echo your thoughts on the knife exactly. While I'm not a pro, I felt like this is a pro's knife. Great all round performance with a bit of a menacing look. Lots of bang for the buck.

What did you think of the edge retention?

Re: Convex edge advice

Thin, polish, then sharpen. If you convex all the way to the edge, you can accomplish both sharpening and polishing at the same time, but its difficult to get a lasting edge this way and a microbevel is often necessary.

Re: Mazaki Watanabe comparison

I have a Yahiko Mazaki as well. It is thinner than both the Toyama and the Wat. I prefer the latter for a workhorse though I really like the Mazaki for a thinner choice with descent release.

Re: Young Samurai

I just recieved my samurai and gave it a quick look over. The ura is very well done. It has a microbevel that I will have to grind out but overall, this is a well finished knife. I've had other yanigiba that cost much more with less consistent grind. The front end of the blade road is ground slightl...
