Re: Expanding Makoto White #2 Stainless Clad Line

Honsuki. Only cause I need one, and if the price is similar to his other stuff I would snatch it up in a second. A heavily asymmetric grind prefered.

Well, you know I'm down to try it. I was trying to be polite and let some others go.

I've been eyeing that Yoshi AS too. Could be next.

It helps that the Yoshimi went on passaround new. And since people have skin in the game, and know others do too ... maybe that has been salutary.
Plus it's a good list.

Re: Next knife-of-the-month passaround?

By the way, the Yoshimi arrived to me today in good order. It is in the best condition I've ever seen on a passaround.

I'd be interested in any of those in 240 length. I've been keen to try a Yoshimitsu AS.

Re: My next step knife suggestions please

I would think both would be a large upgrade to what you are currently using. Aesthetics play a role for sure, so if one catches your eye more than the other, go for it. I don't know what 1k/3k stone you have, but that should be more than adequate to maintain a knife, at least for a while. I wouldn't...

Re: My next step knife suggestions please

The Fujiwara FKM line is a good place to start. You may be better served with a gyuto if you are looking to have a do anything knife. The sujihiki is more suited to slicing protein than cutting veg. You can kind of do it all with a gyuto. Another line to consider would be the Tojiro DP. https://www....

Re: Favorite New(ish) Brands on CKTG

I've been impressed by Makoto's offerings as well. Also, the Yahiko shirogami hairline gyuto is top shelf at an amazing price for those that appreciate a Sanjo style knife. My example is currently on passaround. If you want to give it a go, PM your address to me and I'll work you in.

Re: Best Nakiri at food release?

Oh, man! That's a knife I'd love to try out! I bet it just slays cabbage and the like. Oh, yes indeed! You know what else slays cabbage? Toyama 270. (Sorry for the hijack, but I just had to do it!) 20180206_182624.jpg 20180206_182830.jpg I have one of those, too. All the Toyamas are top notch.

Re: Exploring the world of gyutos

The HD2, the Takeda, and the fujiyama blue are three different styles of knife that represent amongst the best in their categories. They are all examples that belong in the afecianado's collection. I would like to offer the Toyama as a fourth selection that is very different from those you have offe...

Re: Best Nakiri at food release?

This is what i have come to expect from my Toyama 210. It comes at the expense of cracking large carrots and such, but it is heaven for 90% of produce I regularly deal with. https://i.imgur.com/VCkFmmG.jpg Oh, man! That's a knife I'd love to try out!
