I have not discarded it but I have the 240mm and I love it. Not sure if I want to put such a knife through the chaos of the battle line. I know it could handle it but I don't know if I could :cry:

I'll suggest white steel, either #2 or #1. The edge retention is not the greatest but it can take an really keen edge. That will take care of both of his obsessions.

Like everyone else said filling out the questionnaire will help and it will be fun trying to find out the info without giving away the surprise. I'll go a different route to personalized the knife. Depending on your budget I'll get the knife a custom handle, perhaps wit his favorite wood or a family...

This is a really good looking handle. It does gives a much needed extra something to a somewhat "flat" looking knife.

I gave away my ceramic rod to one of my coworkers, when I decided to use loaded balsa only and I kind of regret it. I'll be buying one soon. In a "pro" environment they do come handy if use carefully. For me, I think having more than one option is a must.

Any suggestions on a good 210 gyuto profile that you guys like? I've got a project going with Doi and he is going to do a 210mm for us in addition to the 240 that we discussed earlier. Personally I kind of like 210s a little over-sized in height and length if possible but you tell me. I agree Mark....

I think from the ones you listed, the Kanehide and the Kohetsu are the more "laser like".

Most of my top favorite pro knives are oos, but in no particular order Kanehiro AS, Kamo R2, and Gihei blue 2 are all tremendous pro knives that'll treat you well and well worth waiting on. Looking at what's in stock I'd pick between anryu blue 2, kohetsu hap40, and kurosaki laser. I haven't tried ...

Hi Fred, those are great choices but IMHO I'll put the Masamoto at the bottom, not that is a bad knife, but I think that your other choices are far better. I also notice that the budget seem to be a priority and not the length. I personally don't go about that way ,I would choose the length base on ...

I find the taste doesn't truly mimic real truffles and in a professional kitchen I kind of view it as a crutch for umami.
