Re: WTS KATO 240 STD

Oh you will not regret keeping the Kato, good move. You will also enjoy the Heji, I have a Sujihiki in his semi-stainless and it is fantastic. He of course along with Shigefusa apprenticed under Iwasaki and learned well. If for any reason you don’t like the Heji, you can easily find some one who wil...

It is a good looking knife and it probably performs well.

Re: Show us your new knife!

This Shihan came in today. It’s a 260 wrought iron Gyuto. This year I’m seeking out knives from blacksmiths from all over the world. Its confusing because his business name is Shihan and his name is Shehan, I’m sure there’s a good reason. Anyways, this knife surpassed my expectations, exceptional i...

Welcome to the forum.

Of those listed I like the Makoto the best but you can't really go wrong with any of them, all are good knives.

So far I like Moritaka Santoku, Gihei Santoku/petty, Takeda, etc. High hardness AS.

I don't think Takeda takes his AS up too hard, maybe 62HRC?

Re: Harder versions of white and blue

The problems with high HRC whites / blues are user techniques. It’s all end user and people don’t like to admit fault, blame the smith complain to mark and then mark stops featuring him. tf's don't chip with the right board, technique and sharpening I think the first ones had problems with chipping...

Since you have increased your budget, consider the Takamura Migaki R2 Santoku 170mm. It is an excellent knife you are sure to enjoy. https://www.chefknivestogo.com/takamura1.html https://imgur.com/znxS3KL.png A good first stone for that knife is a Shapton Pro 2000x https://www.chefknivestogo.com/shp...

Re: Elmax Artisan Revere Kickstarter Knife

Performance would depend more on heat treat, grind, profile and geometry more than steel. This PM steel compares to SG2/R2 (see: http://zknives.com/knives/steels/steelgraph.php?nm=elmax%2C%20sg2&hrn=1&gm=0) so would have similar attributes but maybe harder to sharpen. Some don't really care for R2/S...

Re: Elmax Artisan Revere Kickstarter Knife

Not trying to advertise, but I'm honestly lost on a lot of the language. This just seems too good to be true so wondering what cons this knife might have. It claims to basically combine all the pros of japanese steel with german steel with none of the cons... You can find it on Kickstarter. Hoping ...
