For me, my takamura migaki gyuto is my grab-for-anything and is on my rack for anyone to use. But when I have some more involved prep I have been going for my Takeda Classic gyuto. It’s pretty much displaced my nakiris.

Smartest thing I ever did was get all pots and pans with 10” lids. Never have to look for a lid, they all fit. Isn’t the most functional solution for the cooking side- but certainly takes care of a common problem I tend to have.

I would get one with a little belly, not so flat like the moritaka. I think it's hard to prevent accordions with a super flat profile like the moritaka.

Western handle advantage - the flipside

So after I spend time sharpening, I really don't like scraping the blade on the cutting board to scoop or push around food or scraps. I like using the spine edge instead. But that doesn't work well unless you have a western handle because a wa handle isn't flush with the spine.

What do you think?

Apparently Takeda AS 240 Gyuto classic. In stock and out again in 2 hours. Wooooooosh
