I find that if you wipe the blade with acetone and wash and dry, then slice a raw pork loin. I get great blues, purples, and a host of other pleasing colors.

Just a thought. Maybe iron is traditional because it has been around, and used in Japan, a hell of a lot longer than stainless. From what I have observed about the Japanese, is that they tend to appreciate the older traditions. Like I said, just a thought.

Nah, anything with weak KU finish is a no go for me. Ain’t got time for that.
That's too bad. There are some really nice knives out there with a KU finish.
I've not had any problems with my Tojiro knives, and rather like them.

I agree completely that CKTG does an excellent job filling orders and getting them out pronto. Customer care and service rates 1st class in my book.
The biggest problem I see with this kind on service, is it sure makes the descent down the rabbit hole a whole a lot easier.
