I find them to be very different stones. I find the Cho 1000 almost a muddy stone in comparison to the 800. Its not a good comparison, but I find the cho 1000 more similar to the cerax 1000. The cho 800 is harder... I cant' really help with the speed question...

I suppose it will depend on the knife, but that certainly a quality progression you have lined up.

I really like my chosera 1000. I don't want to de-rail your post, but what did you not like about it?

More Sharpening to answer the question posed. It takes practice, practice practice. At least for me it did. My knives were NOT sharp the first time around.

If you just want to "dip your toes in" and/or budget is an issue, a combo stone is a great idea.
If you just want a do the most as possible stone, I would suggest a chosera 800.

Could be wrong, but I don't think you have that many options in 220 grit range. Shapton pro or glass 220. What else is out there?

One easy and important fix. You must secure your stone. You can't have your stone moving while you sharpen. It looks secure in the second video, but not the first.

I agree. and enjoy the 5000. Many and many posts are on this forum about the Rika 5000 and how well liked it is. I have read nothing about the 6000. I would wait. If you do buy a 6000 please consider doing a full review.
