Another possibility, since I think we had gone to calling it a "French" profile instead of a "KS" profile, you could call it the 'Konosuke GS+ French Gyuto 240mm".

As far as the Yoshimi Kato... I actually wouldn't recommend it. Certain types of damascus finishes cause a rough texture on the side of the blade, which causes a lot of drag a sticking as it moves through things you cut. Hello! To clarify, are you looking for a reactive carbon edge steel or a fully stainless knife? I was confused by the statement of VG10 and AUS-8 which are both stainless edge steels. To add onto what has been said already, if you're looking for the best value knife it will often not have a damascus...

There are the options of the tojiro or the shun japanese steak knives, but another option is to buy petty knives to use as steak knives. Since a lot of these knives, even small petty knives, are rather expensive, it would be a very expensive set to sell 4 in one pack. My guess is there isn't too muc...

I have one of these knives and can agree with the stated problem of the stickiness caused by the finish of the knife. What's the best way to get of or polish the finish or make it have less drag? Is there a way to still keep some of the beauty of the finish? I have some MX pads as an option or sever...
