Re: Chinese Cleaver Size

The length is shorter than the large CCK but has the same height. Also I don't keep knives I'm not using and the Zhen would be hard to resell. The Zhen it's not really a sought after knife, but like I said before it's a nice home knife since I live in apartment and don't have much space and love us...

Re: Chinese Cleaver Size

I have owned four different CCK's. I love them, I just wanted to show some love for the Zhen cleaver. I currently use Gesshin wa handle cleaver for work and I really love it. The Zhen is just my home knife The Gesshin looks really nice. Why did you end up using the Zhen as your home knife over the ...

Re: Chinese Cleaver Size

I have the large Zhen Damascus VG 10. The edge out of the box is good but the edge will roll on you if you are not careful, probably has something to do with the heat treatment. But after sharpening it on my own stones the edge held up better. I would not use this knife in a pro-environment because...

Re: Chinese Cleaver Size

It depends on what you want to do with the cleaver. There are thin cleavers for slicing and chopping vegetables... and there are thick spine cleavers for breaking bones... and you can't mix them the other way around. A CCK is never a wrong choice and I would recommend it more than a ZHEN Sorry I di...

Chinese Cleaver Size

Hi everyone! I need help deciding between 2 Chinese cleaver sizes. It's going to be my knife just for chopping vegetables like onion, potato, tomato and broccoli and carrying them from the cutting board to the pot or pan. One cleaver is 6.5 inches length by 3 inches height. The other cleaver is 8 in...

Re: Popped bacon? Anyone?

Sometimes I fry sliced Anaheim peppers in a cast iron skillet and they start popping also. I think the phenomenon might be related.

Re: The Blender Thread

I don't know if you guys are aware but there is a new blender technology. Blending in a Vacuum. If for example you are blending an apple milkshake in a vacuum then the apples won't go brown.

To point out, I think the same people also say that the heat treat on the shun cleaver isn't very good either.

Re: Knives and sun exposure

I think the repeated expansion and contraction caused by the difference between the metal and wood over many years might cause the handles to get loosened.

I had asked about the non damascus version of that zhen cleaver a few days ago and the people here advised me against it.

Here was my post: viewtopic.php?f=3&t=3470

Re: Need Help Deiciding on a Stainless Damascus Spoon

Tbh, those spoons just look like they are dirty. Now if they were anodized Timascus, that's something else entirely.

Do you mean using two chinese cleavers alternating chopping? I do that when chopping lots of stuff
Yeah, that's what I saw. you described it really well. Are there other techniques that use 2 knives at once?

Dual wielding knife techniques?

I saw on tv one time where this guy was cutting up a lot of meat so he was using a knife in each hand to chop to speed up the process.

Are there any other techniques that can be done using 2 knives at the same time and what would be a good reason for doing it?

Re: Experience with Zhen Cleavers?

The main reason I picked that one is because amazon has a special deal for certain prime members where you can get $30 off of any item sold and shipped by amazon as long as it's $60 or more. So with tax that cleaver would come out to $36. I was also looking at a pair of binoculars that are about the...
