I have knives that are thicker behind the edge for cheeses, squash and similar. These thin, hard steels can’t take any side to side torque.

I'm curious, are you going to get any other stock from Daovua? I know they also make sayas for all of their knives, I'd love a tall petty with a saya, but with a darker handle. Yellow cedar burl with a redwood spacer. A nice little handle that is at home in a French pro kitchen.

The grind was deceiving me. Yep. I miss judged. Release isn’t terrible after I put an edge on but very acceptable. :D Definitely one I won’t mind friends and neighbors using to see if they like a nakiri. Received my tall nakiri yesterday. Of course I had to leave the house so did not get to "try it out". But handling it, anyone else's have an almost Takeda/ S grind to theirs? OOTB edge was "ok" but then again I also got 1 of the Shima naguras to try out too. :). I am really WAY to into naguras. :) ...

Tall Nakiri coming today. Don’t know why but contrary to some people, I love the damn things. Favorite one is one Mark no longer carries $70ish? I think. Food release on it matches my Takeda. 🤷🏼‍♂️? I have almost a full set of dao knives, even some Mark doesn’t carry. Tall nakiri is next on my list...
