Thank you all for the feedback. I also posted this to knife a facebook group and IG.
The knife makers that dominate my IG followers, suggested gyutos. The knife enthusiast facebook people, minus the makers in that group wanted ktips.
I will make 3-4 of each with this batch.
Thank you!!

Help me design my next batch of knives.
I have plenty of 1/16th inch AEBL 2 inches tall in the shop. I am thinking of a more budget friendly batch of knives. Help me design them! Ktip or Gyuto?

Re: Is there a “best” steel?
Ok. Here's my experience to back up my next statements. 15yrs ago we got shuns and Mac's as wedding gifts. They worked. I know how to use them without chopping them. About 8yrs ago I found CKTG (thank you M & S). I tried my first tojiro cheap white steel Nakiri with a ho handle and thin grinds. ...

WTS: Handles
I have a collection of handles I have made sitting in the shop. Some of these are me trying something new. Others were made to show off on social media. While I check the forum everyday, I don't post that often. Prices on handles vary with materials. As is - wooden handles - $100-125 Metal spacer ha...

It's considered bad form to go into CKTG forum and list product CKTG sells on other sites for cheaper.

Profiles are not something that is unique in the knife world. Check the choils side by side. Check how these cut though produce, wedge vs food release.

Re: Chinese Limited Edition handmade kitchen knives
Obviously for that price they`re not true damascus, it`s just alloy banding/alloy segregation caused by thermal cycling.True damascus is not the same as pattern welding - two totally different processes.I know the difference between a 58 and a 50 HRC as well. This is absolutely not alloy banding. A...

Re: Chinese Limited Edition handmade kitchen knives
Something just seems off here. Knowing what I pay for steel, and wood. Forget abrasives and the time to heat treat my own knives.
Something is very off here.
What has the Op done to verify the claims of 60+ HRC?

Re: Chinese Limited Edition handmade kitchen knives
They are both mono steels and according to my Chinese friend who is a bladesmith and blacksmith - it is true Damascus ; but I knew that already; I know what to buy and can tell if it`s fake, stamped or lasered immediately. Really good value for money IMHO. If it's Monosteel when you etch it, you wi...

Re: Chinese Limited Edition handmade kitchen knives
Personally I am past the entry level stuff. I want a balance of good cutability and food release. I also care about quality heat treating.
The prices are crazy.
One thing I am questioning, you say Damascus, but only list one type of steel.

Re: Is steel type a priority?
I am a collector turned knife maker. I know what I like... but I suggest that beginner home collectors ignore steel type. Focus on making sure the knife is reheat treated properly (most are) and the grind / profile you want. If you are a pro chef, edge retention is more important. Once you are more ...
