Thank you all for the feedback. I also posted this to knife a facebook group and IG.

The knife makers that dominate my IG followers, suggested gyutos. The knife enthusiast facebook people, minus the makers in that group wanted ktips.

I will make 3-4 of each with this batch.

Help me design my next batch of knives.

I have plenty of 1/16th inch AEBL 2 inches tall in the shop. I am thinking of a more budget friendly batch of knives. Help me design them! Ktip or Gyuto?

Profiles are not something that is unique in the knife world. Check the choils side by side. Check how these cut though produce, wedge vs food release.

Something just seems off here. Knowing what I pay for steel, and wood. Forget abrasives and the time to heat treat my own knives.

They are both mono steels and according to my Chinese friend who is a bladesmith and blacksmith - it is true Damascus ; but I knew that already; I know what to buy and can tell if it`s fake, stamped or lasered immediately. Personally I am past the entry level stuff. I want a balance of good cutability and food release. I also care about quality heat treating.

The prices are crazy.

One thing I am questioning, you say Damascus, but only list one type of steel.

I am a collector turned knife maker. I know what I like... but I suggest that beginner home collectors ignore steel type. Focus on making sure the knife is reheat treated properly (most are) and the grind / profile you want. If you are a pro chef, edge retention is more important. Once you are more ...
