I'd go with a Shapton Glass 500 extra thick. That stone will cut any steel and it produces a very functional screaming sharp edge. Combined with a strop it would be even better... and I'm sure some strop material could be sourced on the island. I'd pass on being too concerned with higher refinement...

How about a link to ChefKnivesToGo.com somewhere convenient to click on in the top banner. You have a link to the forum from ChefKnivesToGo but not the other way around. A lot of times when I read good things on the forum about a knife or a stone I'll pull up ChefKnivesToGo to see videos and reviews...

Anyone else than me that gets a bit perturbed when the poster's avatar and stats are in the right column? I can understand that the most important stuff, the post itself, is on the left, but that avatar column really draws my eyes away from it. Also, most forums have it on the left, I believe. Agree.
