Time off will be good for you, Sue and your employees. You all work hard and the time off is well deserved.

Re: HAP40 vs. SG2/R2?
I have a couple of Sukenari HAP40 knives as well as a Shiro Kamo in R2. My experience on these and other PM steels is that they are very reasonable to maintain as long as you don't let them get out of hand, they are more difficult to repair or thin. I've had to repair a major chip on the R2 knife an...

Re: Question About a Nakiri
Nice complementary knives. I like the new 185, almost like a small cleaver.

Re: The Steak Knife Conundrum
I like the M390,stainless, good toughness and very good edge retention. They've worked out well for me as steak knives, and being a knife fan it's just fun using them. BUT.... If I were to go with a custom set with what I know now, I'd use K390 steel. Compared to M390 it's not stainless but it's tou...

Re: The Steak Knife Conundrum
I converted several of the Spyderco Mules in M390 to steak knife duty. The profile isn't my favorite for the purpose but they hold up much better on ceramic plates.

Re: Single Bevel Wa Gyuto Recommendation
Hi - I have a couple of single bevel gyuto's and the most common problem with them is that they steer. One of mine almost never gets used because of this problem. I have a older Shiraki that's really good and the grind mostly compensates for the steering problem. Shiraki retired a few years ago and ...

Re: Has Moritaka changed cosmetically during last years?
I have a cleaver and until a couple of months ago a santoku that I passed on to a close friend that wanted to get into Japanese knives. The santoku was a good knife but the cleaver is outstanding, definitely a keeper. I suspect the other line you saw must have been a special for the dealer, the ones...

Re: Has Moritaka changed cosmetically during last years?
Mine's a couple of years old, used on a rotation. It's held up fine and it's a good knife.
