No the SP320 is not to aggressive. I use it all the time on my friends dull knives. You probably will never go back hat low on your new knives.

I didnt take photos. I was so busy with a big crowd. But I brined and butterflied a pair of boneless turkey breasts, rolled them and stuffed them with a cornbread-apple- bacon stuffing. I use the 140 diamond plate all the time on soft stainless. I follow it with Shapton 320 and then 1k or 2k Shapton. I don’t worry about deep scratches as usually the knife is beat up pretty good.

They can’t believe how sharp it gets.

My jp knives never go below 1k and usually start at 2 k.

Himalayan Salt BlocK

I have been reading about cooks who use the Himalayan Salt Block.

It sounds interesting but can’t quite believe how good they say the food comes out.

Any chefs here have any experience with these and if so share your insight on it.
