Re: Knife for wife

Wow, already got my wife's knife! I thought it would be next week sometime, I didn't do the two-day shipping, just the free one! So, looks like we will get to play with it this weekend. :) My initial impressions are very positive, almost too much in one respect, lol. Wow, this thing is thin thin th...

Re: Western J knives

A J knife is made in Japan.... Rays list is pretty good. Some others to consider: Andrei from Russia, great steal, pretty thin and phenomenal value right now. Mark Brock, experimenting with some different grinds but nails a chef knife no problem. Great communication and nice guy. Dave Martell, cons...

I use bar keepers friend and 0000 steel wool. Works like a charm. Just did a cleaver that was in worst shape. Came out great.

A little relieved to see California not on the list. At least something is cheaper about living here
Not for long as they need the tax dollars 😬

Kit “pocket knife...(opinel #6 carbone) but we all know I am strange.”

Not strange at all these are great pocket knives and takes a good edge without a lot of effort.

Re: Custom cutting board designs

Wow, thanks all for the great suggestions! Lots for me to think about and discuss with the local builder. I'm thinking of going around 20x30 inches, would 1.5 inches thick be the way to go? Would a thickness of 2 inches make any appreciable difference? I want it to be usable on both sides. I believ...

Re: How many tries to get a good edge?

I spent some time teaching my nieces to sharpen a couple weekends ago, and they are doing pretty well. I taught them my matchbook trick for angle, and they can both get very good 1K edges after only a few tries. Their 3K edges are still coming about, but the Cerax is a very good stone - they decide...

And in Minnesota we get humidity (highest continental US dew point ever recorded was here) and it gets darn dry when them outside temp is 30 below.
And you still live there 🤔

Ah don’t forget those small blood sucking birds, I think you call them mosquitoes 😂

Kevin, thanks for working with me on the money order process.

Received the knive and in great shape. You also did a great job on the edge.

You are great to deal with.

The Japanese newspaper was a fun addition.

Set your stone to 20 degrees off the counter, hold the knife level to the counter.
Never thought of this. Will have to give it a try.

Start with the edge perpendicular to the stone, as you move, keep the edge perpendicular as you make your pass. Work slowly, and just follow the curve.
This is what works for me. Not sure who first recommended this technique but I think it was Ken. Made a world of difference in curvy knifes.

Re: Soft-shell crab

Never tried soft shelled crab. But that looks delicious. Need to get out of land locked utah. Look around you - I got live (flown in from Maryland) carbs when I lived in Montana - I made softshells on the grill at work earlier this summer - there should be a good fish monger in most places. I've ha...
