I ended up getting a 240, thanks to this thread and very nice forum member. I had mine thinned, etched and ended up having an Arizona ironwood handle installed on it. That core steel is off center, so the cladding is different on each side, it’s a quirk I like. I actually just picked up a second on...

Color me cheap. Found 12 used and cheap steak knives ( not serrated) at thrift market for a buck each. Put 325 grit belt sander obtuse edge on them. Works great. When dull back to sander for touch up.

Can’t really answer your question on between the two stones. I can however tell you the shapton 2k is a great stove to use. My favorite of all the shapton I have used.

Kevin was great to work with. Knife got here in great shape. Took several minutes to get it open 😂.

Be careful as I believe it won’t stay flat. Should work for awhile but check for flatness every so often.

Just started doing the cooking class idea. My first was Mexican at Cancun. Loved it and it won’t be my last.
