Was checking the new sticks and saw that his. Looking king at the pictures it looks like a double bevel which is rare for a Honesuki.

Was also interested in the weight.

My son in law, the chopper who was use to dull knives. Mine are not but he hasn’t changed his technique. I have removed my good knives to my use only drawer. By the way have had to sand the cutting board twice now.

Will I took the plunge and got one. My problem is in some cases it works too well. If the meat is in an ackward place where you can’t read the screen and without a hold button by the time I bring it out it is changing the temp measurement.

Sure wish it had a hold button but wow it is fast.
