Re: French profile gyuto with French handle

Nice work. That looks like an old Sab without the finger guard.
One of the (few) things I hate about Sabs! Which was one of the drivers of this project
Did you use a Shibata Kashima?
Forgot that detail in the OP. Yep, it's a Shibata

French profile gyuto with French handle

I had had this as a project waiting in the wings for about a year and finally got to it - I wanted to take one of the French profile 250 gyutos and see what it looked like in a Nogent handle, the kind the old Sabatiers had. I made it out of a piece of steel tubing and ebony. The whole thing is frict...

Re: Moritaka Tall Nakiri blade thinness

Ah I hadn't thought to check the weight. The cleaver was 1.125 lbs but is also 30 mm longer. I'll compare some weights of other tall nakiris.

WTS Moritaka Cleaver 210 mm - TRADED!

I have had this cleaver for a while but only used it a few times, it's just too heavy for my taste. It has a custom koa western-ish handle.

Asking $400 shipped ConUS.

Re: Looking for one 240 ktip to rule them all

I picked up a Gesshin Kagekiyo on Japanese Knife Imports, it's been a fantastic knife and the fit and finish are just amazing. I got the 270 in w2.

Moritaka Tall Nakiri blade thinness

I'm curious about the Moritaka tall nakiri (https://www.chefknivestogo.com/moastana.html), if anyone has tried it - I have a Moritaka cleaver that is just too heavy for me and was wondering if anyone had a comment on the heft of it or the thickness of the blade compared to the cleaver.

Those protein forced patinas look awesome. I love the visible difference between the regions on the honyaki.

Re: I’ve been talking to this blacksmith...

He also told me he has access to a little better steel that he harvests from discarded pipelines. I'm going to get a picture of it from him. He gave me the option of either steel for the same price. If you have a preference let me know but if he thinks it's better quality I'm willing to listen to h...

Re: Carbon blade care how much effort is it really?

For me it was just a matter of building habits. Now I habitually rinse it after cutting up foods and after finishing I leave it out to dry. That's about it.

Re: Worst Knife Purchase/Sale Decisions

I tell everyone. Go through inexpensive blades. Identify what you DO like about them.. then graduate through them and upgrade once you can identify both the pros and the cons of the blade where it helps/hinders performance. I found a dirt cheap super-thin, no-name nakiri way back and gave it to my ...

Thanks for the confirmation. I've been making some handles that way and was wondering about longevity (they are all grain-aligned, cut in half from an initial piece).

Re: Worst Knife Purchase/Sale Decisions

Worst buy was probably a Moritaka cleaver. It's an excellent knife but I did not carefully consider my own style and it just doesn't fit with what I want. On the flip side I really regret hesitating on a mammoth tooth handled knife in the classifieds a few months ago.
