One of the (few) things I hate about Sabs! Which was one of the drivers of this projectNice work. That looks like an old Sab without the finger guard.

Ah I hadn't thought to check the weight. The cleaver was 1.125 lbs but is also 30 mm longer. I'll compare some weights of other tall nakiris.

I picked up a Gesshin Kagekiyo on Japanese Knife Imports, it's been a fantastic knife and the fit and finish are just amazing. I got the 270 in w2.

Moritaka Tall Nakiri blade thinness
I'm curious about the Moritaka tall nakiri (https://www.chefknivestogo.com/moastana.html), if anyone has tried it - I have a Moritaka cleaver that is just too heavy for me and was wondering if anyone had a comment on the heft of it or the thickness of the blade compared to the cleaver.

For me it was just a matter of building habits. Now I habitually rinse it after cutting up foods and after finishing I leave it out to dry. That's about it.

Identify what you DO like about them.. then graduate through them and upgrade once you can identify both the pros and the cons of the blade where it helps/hinders performance. Worst buy was probably a Moritaka cleaver. It's an excellent knife but I did not carefully consider my own style and it just doesn't fit with what I want. On the flip side I really regret hesitating on a mammoth tooth handled knife in the classifieds a few months ago.
