Re: Favorite Kitchen Item?
Digital Scale. Does grams and ounces. It gets used for everything from measuring coffee, to burger paddies and used to get used for baking. Even use it to weigh baking soda for the correct ratio to water to clean corrosion from lead acid batteries. This is exactly what I was going to say but then ....

I believe he posts them to a website he owns, then links in the picture using the img button. But I have been wrong many times before, so don't quote me on that. :D You are correct. I upload them to my hosting site as .jpg's and link the URLs to those files in my posts via the IMG button so that th...

Happy taco Tuesday everyone! P.S. How does Ronnie make his pictures so big? I just use the attachment feature but then you have to click on them to make them bigger. Had an orphaned end from a side of Norwegian farm-raised salmon I bought (and grilled most of) last week. Planned on simply seasoning it and pan-searing it just to use it up but once it was going, I couldn't help myself. Ended up with a pretty nice dish . . . https://www.ronniesuburban.com/photos/fo...

Re: Baking Much?
Tangzhong is a game changer. Where I'm from we call it a water or milk roux. I've tried the Yudane method, too....similar to mixing hot water cornbread. When I make cinnamon rolls or King Cake I mix a pudding with the flour that is a spin-off of Tangzhong. I usually fold the milk bread similar to H...

Re: Baking Much?
Wunnerful, wunnerful Mr. Suburban! I tried a recipe for it last year, didn't turn out well. What recipe did you use? Thanks. I kind of just put something together using bits and pieces from a few sources, plus some technique that I picked up from baking the Claire Saffitz dinner rolls recently. It ...

Re: Baking Much?
Looks good Mr. Suburban. I hope it tastes as good as it looks. Do keep us posted, please. Thanks. It turned out really well, especially for it being the first time. I used 50/50 bread and AP flour. The result was nice mix mix between tender/fluffy and pull-apart. The innate sweetness of the bread w...

Re: EDC Hygiene: Fixed Blade VS. Folder
I think that all things considered, you're better off with a fixed blade EDC for food prep. Not only are the pivots in folders problematic because food can get in them and they cannot always be cleaned well without disassembly but many of the substances used to maintain folders (and their mechanisms...

Re: Baking Much?
My first attempt at Japanese-style milk bread . . .
Milk Bread
Compared to what I've bought in the past and seen online, it looks pretty close. Smells great. Won't know for sure until I cut it open later.
