I’ve been eyeing a makoto AS ryusei 240. Also shibata AS and matsubara but these two are probably unrealistic with Christmas on the way. That kono western 240 seems like it would be a perfect every day gyuto for work though. Just more of a carbon steel kind of guy. Would love to pick the makoto up. ...

Wusthof knives for me are always just a pain in the butt to sharpen. I have a few just because I live near one of their factories in CT. They have an outlet store there and a lot of stuff is dirt cheap. The only wusthof series that isn’t too bad sharpening wise that i’ve used are the pro and gourmet...

I usually do a 15 degree angle for two daos I have. Works out well. Lately I sharpen them with a chosera 800 and finish on a shapton glass 2k. Also works out well!
