Ben says it’s terrific for folders. I didn’t get the impression from him that there was too much benefit with bigger kitchen knives. Email Edge Pro and they’ll tell you everything you’ll need to see if it’s worth it for you.

Ah, erasing all the sharpie marks and evenly is idea? Do you use magnification to see the erasure— making sure it’s going to the edge of the edge? And not raising the top line of the edge?

Thanks, Grant. That’s pretty clear, as least on read through. I’ll have to work through it to see if I can properly apply these techniques. I’ve never marked centerlines on blades or tape before. What is a “Takeda type sharpie line”? That much I know i don’t know. Thanks you again!

I’m sticking with my edge pro stones and tapes and my Makoto R2, but I can easily see why many excellent home cooks wouldn’t necessarily commit to this rabbit hole.

If you’re not going to get into hand sharpening, or edge pro type jigs, buying a 10 pack of that knife ( Victorinox ) and the priciest Chef’s Choice metal-muncher for c. $130... it will be enough to get you through soft tomato’s without crushing any of them.

And the ubiquitous Forschner Victorinox fibrox-handled chef’s knife that they love is a perfectly serviceable knife. It’s been my beater for 10+ years.

And one wouldn’t be in bad shape with a Masamoto VG10 gyotu, Which several years ago was their favorite “Japanese hybrid chef’s knife.”

For all equipment besides niche cutlery, they’re an excellent source of reviews. If you’re a very good amateur chef, most recipes (outside of, e.g., baked goods) are only just guidelines anyway.

I’ll vouch the utility of the EP magnet, specifically the utility of being able to disengage it. If I’d have stuck with ATK, the Masamoto VG10 would have been the best J-knife I could have gotten. Yet my new Makoto Sakura is happily standing in place of ATK’s top pick (Masamoto VG10) for hybrid chef’s knives.

yep - I use this regularly on the EP. I start with a thinning angle, then add main bevel at +2 or 3 degrees (depends on the steel & what I'm trying to achieve) & finish with a microbevel at another +2 or 3 degrees. So work out what final angle you want, in degrees per side, and work backwar...

Yet the razzle-dazzle of Bob Kramer beheading 12 water bottles on YouTube in one swipe? Or another guy goin’ microtome on a elderly tomato? That is stuff I’ve sent non-knifehead friends to quickly and viscerally convey what a sharp knife can do, and why any of us care about this to the degree we do.
