Any other 210 gyutos...like Makoto AS Ryusei, Kurosaki megumi, or Kato Nashiji Suminagashi? I have a B#2 matsubara 210 and a Koishi 240. Thanks!

Thanks Ron (and everyone). Good to know everything as I am looking forward to using and enjoying my new knives without rust! I'll look into the microfiber cloth right now. I have read that if I do get rust, I can fix my knives.

Yes, I do mean "store between uses". With my other knives, all stainless until now, I wash and dry thoroughly with towels. I leave them out to be extra sure they are dry before they go back into the counter knife block or the in-drawer cork devices shown in my first post. There should be no moisture...

I went with the Matsubara B#2 Nashiji. There was a new one posted with a beautiful black and blue custom handle and that's the one I picked. Thanks for the help.

Is there a difference in the performance between the Matsubara B#2 Wavy face vs. Matsubara B#2 Nashiji Gyutos? Besides the 'finish' of course. I do use a pinch grip, but with this blade and the size of my hands, my other fingers are essentially wrapped around metal (except for the last finger) rather than to the end of the handle. Just not that comfortable for me.

The Masakage Yuki tall Nakiri just came back in stock and I snatched one of those up today. Just need a 210 gyuto or kiritsuke and I have a rather good collection of knives (for now). Still might need to rehandle or at least move the handle closer to the blade on the koishi.

After more research, I am now leaning to the following gyuto blades in 210mm size: Kanehiro AS or Makoto Ryusei AS or Anryu B#2 Hammered The Yahiko W#2 Nashkiji and the Makoto W#2 are both OOS, but impressive. Now that you ask, I don't rock chop a heck of a lot anymore...herbs and getting finer onions, garlic mincing, etc. I get according cuts often from my current knives and have to do extra work to get stuff small. Is the Matsubara heavy for long periods of work? I have small hands.

Also, I really liked the Konosuke MM B#2 gyuto because of the good flat spot at back and a bit of a belly at the tip. I tend to rock, chop, and push/pull depending on what I am working with.
