Re: Need a Stainless Recommendation

I just bought the Kurosaki Fujin VG10 Gyuto 210mm with the beautiful custom handle (Japanese Elm Burl (S), Tasmanian Blackwood with masur birch and G10 spacer). Thanks for all of the information. Sure appreciated!

Re: Need a Stainless Recommendation

I do like the look of the G3 Harukaze and that is a good price. Shame it doesn't come in 210. I find the 240 is a little long for me...I have two of them...a Miyabi Birchwood and a Masakage Koishi.

Re: Need a Stainless Recommendation

Thank you all. I have narrowed it down to Shibata or Kurosaki. I could do the Kurosaki since I am also interested in Shibata's AS santoku. Then I could get best of both worlds. The Kamo at 210 is gone for now.

What about Yoshimi SG2 Gyuto 210mm? It is currently OOS.

Re: Need a Stainless Recommendation

That is very helpful. Then I should lean to HAP40 or SG2/R2. There are only two knives in HAP40 here...Gihei or Kohetsu. Is one better than the other? Or are one of the SG2/R2 options the way to go?

Re: Need a Stainless Recommendation

Thank you. I've found it at that site. Which has better edge retention and ease of sharpening...HAP40, Ginsan, or SG2/R2?
Thanks everyone.

Re: Need a Stainless Recommendation

That is a lovely knife, but $430 is a bit too steep a price for me. That has to go on my wish list too.

Re: Need a Stainless Recommendation

Leaning towards the Shiro Kamo, Shibata or Fujin. Shizuku is OOS and I didn't see a Tanaka Ginsan on this site. I 'googled' it and saw that it used to be here and it looks really nice. Could also do HAP?

Re: Need a Stainless Recommendation

Diversity. My main group of products are vegetables (onions, peppers, tomatoes, etc). I would never use my J knives on hard squashes and the like. I also do some prep with boneless proteins. Damascus and Fujin are attractive knives and I do like the beauty as well as function. I have no lasers in my...

Need a Stainless Recommendation

I've been thinking I 'need' an all stainless 210mm just in case I am lazy and don't have time to tend to my Blue #2 at the same length (Matsubara Blue #2 Nashiji Gyuto). I was thinking about Shiro Kamo R2 Damascus Gyuto, Shibata Kotetsu R2, Kurosaki shizuku r2, or Kurosaki Fujin VG10. I have a Koish...

Re: Black Friday/Cyber Monday Wish Lists

Any other 210 gyutos...like Makoto AS Ryusei, Kurosaki megumi, or Kato Nashiji Suminagashi? I have a B#2 matsubara 210 and a Koishi 240. Thanks!

Re: Question on proper storage of carbon knives

Thanks Ron (and everyone). Good to know everything as I am looking forward to using and enjoying my new knives without rust! I'll look into the microfiber cloth right now. I have read that if I do get rust, I can fix my knives.

Re: Question on proper storage of carbon knives

Yes, I do mean "store between uses". With my other knives, all stainless until now, I wash and dry thoroughly with towels. I leave them out to be extra sure they are dry before they go back into the counter knife block or the in-drawer cork devices shown in my first post. There should be no moisture...

Re: Question on proper storage of carbon knives

I have some desiccant packets around the house that I can put in that drawer. I have two of these knifedocks (one like pictured and one that is about half the size). They share the extra wide drawer with my spices. Climatically, I live in Phoenix so it is dry here most of the year. I do not have say...

Question on proper storage of carbon knives

Screen Shot 2019-10-11 at 4.33.49 PM.jpg I now have 4 beautiful carbon knives: AS, B#2, and W#2. Since I have not owned reactive knives before, I need to know how it is best to store them between uses. I have a cork in-drawer knifedock and if the knives are completely dry, can they be stored in the...

Re: Looking for a knife recommendation

I went with the Matsubara B#2 Nashiji. There was a new one posted with a beautiful black and blue custom handle and that's the one I picked. Thanks for the help.

Re: Looking for a knife recommendation

Is there a difference in the performance between the Matsubara B#2 Wavy face vs. Matsubara B#2 Nashiji Gyutos? Besides the 'finish' of course. Also looking at Yahiko Sanjo W#2 Nashiji Gyuto, or Makoto Ryusei 210 or Kohetsu B#2 Bunka 210mm. Also looking at Tanaka B#2 Nashiji Gyuto - full reactive kni...

Re: Looking for a knife recommendation

I do use a pinch grip, but with this blade and the size of my hands, my other fingers are essentially wrapped around metal (except for the last finger) rather than to the end of the handle. Just not that comfortable for me.
