I just bought the Kurosaki Fujin VG10 Gyuto 210mm with the beautiful custom handle (Japanese Elm Burl (S), Tasmanian Blackwood with masur birch and G10 spacer). Thanks for all of the information. Sure appreciated!

I do like the look of the G3 Harukaze and that is a good price. Shame it doesn't come in 210. I find the 240 is a little long for me...I have two of them...a Miyabi Birchwood and a Masakage Koishi.

Thank you all. I have narrowed it down to Shibata or Kurosaki. I could do the Kurosaki since I am also interested in Shibata's AS santoku. Then I could get best of both worlds. The Kamo at 210 is gone for now.

That is very helpful. Then I should lean to HAP40 or SG2/R2. There are only two knives in HAP40 here...Gihei or Kohetsu. Is one better than the other? Or are one of the SG2/R2 options the way to go?

That is a lovely knife, but $430 is a bit too steep a price for me. That has to go on my wish list too.

Leaning towards the Shiro Kamo, Shibata or Fujin. Shizuku is OOS and I didn't see a Tanaka Ginsan on this site. I 'googled' it and saw that it used to be here and it looks really nice. Could also do HAP?

Thanks Ron (and everyone). Good to know everything as I am looking forward to using and enjoying my new knives without rust! I'll look into the microfiber cloth right now. I have read that if I do get rust, I can fix my knives.

I went with the Matsubara B#2 Nashiji. There was a new one posted with a beautiful black and blue custom handle and that's the one I picked. Thanks for the help.

Is there a difference in the performance between the Matsubara B#2 Wavy face vs. Matsubara B#2 Nashiji Gyutos? Besides the 'finish' of course. I do use a pinch grip, but with this blade and the size of my hands, my other fingers are essentially wrapped around metal (except for the last finger) rather than to the end of the handle. Just not that comfortable for me.
