Re: Knife maker Shintou

Reminded me of a Haruyuki Zanpa which is the same steel and handle as the Nami. Also made in the same place (Tosa). I’m going to go out on a limb and say “same knife, different name “. I do prefer the handle on the Shintou.

Re: Want to get a cast iron pan

After some additional reading it seems important to wear a mask while working on smoothing cast iron. That's not a problem for me since I have some that are left over from some event. Can't quite remember what it was.

Re: Want to get a cast iron pan

Smoothing them out is a snap with an angle grinder and a flap disc. I like a smooth bottom. I have a Wagner that I got smooth. I'm thinking factory finish (has been in the fam at least 3 gen) now that I have a 36 inch griddle and a smaller gas grill I don't get the cast iron out much (that and you ...

Re: Your Knife That Outperforms Its Price

Didn't even have to think about this for a second. Anryu Blue 2 hammered: https://www.chefknivestogo.com/anhagy21.html This weekend I was using it along with a Kono FM. There are differences between the 2 knives. Some things I like better about the Kono. Some things I like better about the Anryu. B...
