Re: Would my current knives be suitable for Sushi Rolls?

I bought a Toyama 240mm Gyuto thinking it was a fantastic knife that I picked up at a bargain price but, after trying to slice off the skin on salmon fillets (OK some of you like skin but we don't) I realized that it just wasn't up to what I have had. My 240mm Gyuto for doing the job is a Konosuke ...

It’s just so wrong for so many reasons.. don’t get why he doesn’t use a blank or cheaper nakiri.

They still make classic on custom order. Current wait times 6-12 months.

Re: Question About a Nakiri

The takeda I have has magical food release but I use it more seldom because it's so thin and sharp :-P. My technique is bad and I cut into the board too much. I love Takeda’s nakiris because they are so thin. Definitely need a lighter hand or they will eat your board for lunch! Horizontal cuts are ...

They sort of look like they were dipped in the same way you make candles.
Like what they do for hammer handles? The look just isn’t my preference. But they probably do offer good grip.

Re: USPS Shipping Delays

The Elk Grove center is a mess. I’m in Chicago and had a package sitting there for nearly 2 weeks. It didn’t get a scan until after I filed a lost package report and though I was happy it wasn’t lost was annoyed it hadn’t left the city. For those of you not in this area Elk Grove is greater Chicago ...

Re: Go home USPS, you're drunk!

I’ve stopped using USPS for time being until it gets back to normal. Last month it took 13 days to get small package from IL to NC, tracking wasn’t working then either. During this same time period I had an order from Denmark get to me in 4 days via DHL.

Great job re-engineering this! Love the spine and pocket support up the saya, a lot more secure. Your finishing is good too, wouldn’t know by looking at it was taken apart and put back together. No Frankenstein bag here!

Re: Blue #2 vs AS

I prefer a knife from a skilled maker who is used to a particular steel over another steel from the same maker. Well said. Took me awhile to get that seemingly obvious concept. When I first got into higher end knives 4 years ago it was all AS because it’s “best”. Didn’t matter who made it. Now it’s...

Re: Forge to table

Some more expensive knives do have a reputation for poorer f/f but they also have well established reputations for amazing cutting abilities, which really is the important part. A crocked handle may look wonky but it doesn’t really effect usability and many simply chose to rehandle. It’s hard to tel...

Re: Ceramic coating

Pretty sure Mark wasn’t asking this for himself but point taken. Let me rephrase more constructively. Pls do not take industrial automotive compounds not approved for food safety to coat kitchen utensils. In all likelihood it will be flaking off within a year or two.

Re: 125X Magnification: Tanaka Petty and Masakage Yuki Bunka Edge

Never realized how easily accessible these cameras are, have an order in for one. Oh and one final (unscientific) observation for the knife nerds out there like me. After about a week of use and no touch ups, almost every single gyuto, petty, nakiri, etc that I own from VG10 to AS to SG2 all had wha...
