This is my fav braise (tri tip). Lodge is the simple and cheapest choice. We love our pair. If you are looking for a carbon steel the WJT is a beauty but way more expensive. A 180 is usually my preferred size and I have 3 of them (for now). For what you are talking about I think the Myojin Riki fits the bill. SG2, thin, shiny and well finished. I love this knife! Another Eggs Benedict day. This time i got some thick sliced cherry wood ham from the local deli sliced to a #3 thickness (about 3/8 ") instead of the normal canadian bacon. My fav Hollandaise pictured.

65mph winds knocked out the power yesterday so dinner was fresh cream of mushroom and some focaccia slices under led lantern for dinner lol.
