This is my fav braise (tri tip). You could get out your large dutch oven or a baking pan covered tightly and make a double batch. have some noodles ready to go. tri tip ready when you come home (takes 2.5 hrs in oven for me) and or small baked potatoes or roasted veggies in oven at the same time. ht...

Lodge is the simple and cheapest choice. We love our pair. If you are looking for a carbon steel the WJT is a beauty but way more expensive. I find myself using the Lodges when I want a very hot pan for heavy searing. My carbon steel pans, WJT, Mineral B etc. are for more normal use. My brother and...

A 180 is usually my preferred size and I have 3 of them (for now). For what you are talking about I think the Myojin Riki fits the bill. SG2, thin, shiny and well finished. I love this knife! Another Eggs Benedict day. This time i got some thick sliced cherry wood ham from the local deli sliced to a #3 thickness (about 3/8 ") instead of the normal canadian bacon. My fav Hollandaise pictured.

65mph winds knocked out the power yesterday so dinner was fresh cream of mushroom and some focaccia slices under led lantern for dinner lol.
