Re: Baking Much?

My first attempt at home made pizza! It uses the same dough I used for my loaves recently. I'm sick today but I felt the urge to try this, so I just went simple in order to get myself used to the idea of how to make pizza. Could have maybe done more cheese, and the bread is slightly chewy for a piz...

Re: Baking Much?

Do you know if the powdered milk is "scalded" or not? And thanks, I always wondered why that was done. And how anyone ever figured it out in the first place. Is it scalded? well it seems the KA version is, but other stuff maybe not from what i read, however whether it is or not it still w...

Re: Baking Much?

Easter bread last night. Technically "Paska" but its more like japanese milk bread. This is a enriched bread with 3 eggs, half a stick of butter and some sugar. The enriching part gives it a long shelf life (but it usually goes fast). Next time I'll form the loaf like Ronnie did in his mi...

Re: Baking Much?

I took a shot at making Easter bread (paska version). Was too chicken to fool around with the decorations since I didnt know if it would turn out how I liked it (from eons ago memories of my Gma's version). Most of the recipes were kinda vague about measurements but I took the plunge and make a doub...

Re: What did you cook today?

Stir Fry tonight! Got some nice filet and sliced it with my only yani, but not as consistent as I would like but...brocc and cauliflower went into chef mike for 1.5 mins to soften them up a bit. Sauce was kitchen sink sauce and a touch of tamarind powder. Beef cooked in two batches, then peppers/bru...

Re: Need help figuring out a main course.

This is my fav braise (tri tip). You could get out your large dutch oven or a baking pan covered tightly and make a double batch. have some noodles ready to go. tri tip ready when you come home (takes 2.5 hrs in oven for me) and or small baked potatoes or roasted veggies in oven at the same time. ht...

Re: What Pizza did you make or eat today?

I'm on take 2 for focaccia pizza. This is the recipe for mini-focaccia breads from KA adapted to pizza (or trying to adapt..) Baked in a 10 inch cake pan for 12 mins, then thicker sauce added, cheese and super thin Boars Head pepperoni (that I bought for making but stromboli but didnt lol), which di...

Re: Want to get a cast iron pan

Lodge is the simple and cheapest choice. We love our pair. If you are looking for a carbon steel the WJT is a beauty but way more expensive. I find myself using the Lodges when I want a very hot pan for heavy searing. My carbon steel pans, WJT, Mineral B etc. are for more normal use. My brother and...

Re: Baking Much?

This is my first foray into the "Baking Much" thread! It is also the first time I have made english muffins. I have decided to try and make the ultimate breakfast sandwich and since there are no bakeries that make english muffins in my area I had to make them myself. I have to say that I ...

Pan Pizza Night! This is the cast iron pizza recipe from ATK (and loads of other...) thats no knead which takes a day or more to be ready to use. This is in a 12 inch pan with cheddar jack round the edge to form a wonderful Frigo. Its thick but tasty! IMG_4386.jpg Cheddar Jack around the edge to for...

Braised pork chops with rice & asparagus today: Stopped by Whole Foods and they had good looking chops on sale so grabbed a few. Added some Cheddar Brocolli Rice a Roni with asparagus tips. I braised the seared the chops, braised them in some diced onions/redicuts and a few spices, then finished...

Re: Your preferred 180mm

A 180 is usually my preferred size and I have 3 of them (for now). For what you are talking about I think the Myojin Riki fits the bill. SG2, thin, shiny and well finished. I love this knife! But I sure would like to try out a Takamura SG2 if they ever come back in stock. https://i.ibb.co/cNFV2t5/3....
