Re: Hard boiled egg problem

It helps to let the eggs age in the frig for a couple weeks before boiling them. They will be much easier to peel.
I'm down to boiling them for only 6 minutes, then ice bath.

Re: Recommendation for 240 gyuto best for Food release and edge.

Anryu blue #2. Finally had to try one after reading all the rave reviews. It delivered, its performance on everything I’ve used it for since it arrived is outstanding. I liked it so much I bought a second as a gift for my brother. It’s a whole lot of knife 240.00 bucks. I have the Anryu blue #2 in ...

Re: Refurbishing straight razor

I understand what you are talking about and I don't even own a straight. I only just began learning about them and do see that one is supposed to lay the blade flat to the spine as this gives the proper angle to the edge. You say you removed a small frown on the edge.I wouldn't think that would be a...

Re: Diamond stones

My highest grit diamond plates is 1500 grit on my guided system and the knives that I use it on for my final have S30V , CPM S110V, CPM S35VN and CPM 20CV and I can not imagine those knives getting any sharper. It does a fine job. Mind you,I can not tell you what my carbides are doing but then ( "yo...

Re: Cancel my order fee

In Marks case, with knife orders,I would imagine it is quite frequent that orders are canceled. It is easy to imagine a person wanting to put in an order on a knife that he has seen very good reviews on while searching the forum and then bam,he spots a few more reviews that maybe aren't so good or ano...

Re: Shapton full thickness glass stones

I wanted SG stones from the start but when I seen how thin they were,I looked the other way. They didn't appear to be that cost effective.I should talk,I have plenty stones that I am not even using.Catch 22. I like the glass base though. That makes the stones unique.

Re: Cancel my order fee

The cancellation fee of 5 bucks wouldn't bother me,though I have never canceled an order, ever. When I click the buy button,I know that is what I want. I like J david's answer to this problem.

Re: Show us your knives!

This will be fun. I started down this rabbithole Christmas of 2018, found CKTG by chance and bought a Makato 210. Stone and knife trading followed but the thing I enjoy the most are the people who share a passion for this too. I’ve met some good friends through this hobby, some really enjoyable peo...

Re: Pocket knives

My KME sharpener does a fantastic job on my pocket knives. I am comfortable with sharpening up to 3-1/2 inch blades on it. I mostly just use the diamond plates that come with the kit. The finest grit being 1500 grit.I do all my clip on knives with the jaws that come with the kit but I bought the sma...

After months of cooking with my Matfers,Debuyer's and a Mauviel,my Debuyer's took on a deep dark richer seasoning then did my Matfers. My Mauviel Omelette pan even took on a nice deep seasoning better then my Matfers.I did find that when I quit worrying about what oil or what seasoning method was be...
