Re: Tomita-san knives

Very tempted to grab one of these knives for sharpening/sanding/polishing/rehandling etc practice, and possibly for guests to use. Not sure how I could go too far wrong at that price. That was my thought exactly. Alas my cunning plan was rather foiled when I discovered you can't buy knives on ebay ...

Just this week I managed to cut myself on a lightbulb (unbroken).

I've previously managed to stab myself in the finger with my hair too.

I think it's white truffle oil that has no truffle but other types do - I may have that the wrong way round though!

Workshop upgrades, make more handles, sell handles, but Nakiri. Sorted.

Now about my consultancy fee for this advice...

Master of Malt sell sample size bottles of most of their whisky - great for trying stuff that's rather expensive!

Re: First Gyuto / First Really Decent Knife - HELP!

Most people wait for their first knife to arrive before building a collection!

Glad to hear you've picked something up - I'm intrigued to hear your thoughts on both knives when you have them in hand.

Do you own/control the old domain name? That would give you some options. Although as DarkStar said it's the content that has value to Google.

I presume the one who disappeared is wabocho? (Seemingly demand was such that it was no longer enjoyable!)

I've been hoping to find someone UK based who makes sayas, but haven't turned anything up yet.

Re: Recommend me a Nakiri

It's arrived and I've taken a few photos - first impressions are it's longer and thinner than I expected. I've not had chance for any more than a cursory inspection so far, hopefully I'll get chance to cut something with it next week! http://i345.photobucket.com/albums/p361/bongokingbaby/Knives/Shin...

Re: First Gyuto / First Really Decent Knife - HELP!

I'd be tempted to buy the Gihei (it's stainless clad isn't it?) and see how you get on.

If you love it, then great, if not you'll know what was good/bad and can make a more informed decision on your next knife.

You'll probably be able to sell it on for only a small loss too.

Re: First Gyuto / First Really Decent Knife - HELP!

I'd definitely spend the extra on a decent knife - if you're anything like me and you don't you'll only end up buying it after the cheaper one.

I'd also get a move on in any case - once Article 50 is triggered the pound will very likely drop a decent amount.

Re: Recommend me a Nakiri

I ordered a Shinji Fujishita 165mm Nakiri last night, it's about 1/4 of the price of the Takeda so I'm happy with it as an experiment, for size, style etc. I came across it when looking at more information on the new Ishikawa knives Mark posted about (the single bevel Nakiri intrigued me) and really...

Re: First Gyuto / First Really Decent Knife - HELP!

It's VAT, and possibly an extra 2.5%, and probably a handling fee from the Courier.
