Almost all of the cladding is going to be a soft stainless and scratch easily. Chromax is basically A2 tool steel, and it's readily available, so it wouldn't be too difficult to have a custom maker make something up for you in a mono steel blade! It's not the same, of course, but their HAP40 is awesome in either damascus or migaki. Super hard either way. But I understand the drive toward the unicorn AS damascus ones. They apparently had a big failure rate when quenching which is why they stopped treating them to such a high HRC. I don't thin...

The 4K was used once, but the 500 and 1k were used on five or six longer knives, so they have a slight amount of wear and dishing. There's still plenty of life left in these stones. I just use a gyuto or short suji and don't have any problems. I guess my preference would be a stiff 210-240 suji, but really most of my gyutos and petties work fine. Even a 180 or smaller can get the job done just fine. I'm not sure there is a knife that is "THE" one best tool for this jo...

I only had one knife on my wishlist this year. Takamura Chromax 130mm petty. Didn't make it onto Santa's sleigh unfortunately. But I did use plenty of the knives that I already own, so I guess that's a win!

For home cooking, a 210 (or slightly longer) is really in the sweet spot. They're big enough to cut most things but don't require a ton of space. I really enjoy using larger knives, but they're too big for the smaller cutting boards I most often use to prep meals. So I have to break out the larger b...

Takedas are indeed quite dainty, especially the smaller (210mm-ish) gyutos. One thing I'll disagree with Taz575 about is the Takeda profile... it's not flat at all.
