It's not the same, of course, but their HAP40 is awesome in either damascus or migaki. Super hard either way. But I understand the drive toward the unicorn AS damascus ones. They apparently had a big failure rate when quenching which is why they stopped treating them to such a high HRC. I don't thin...

I just use a gyuto or short suji and don't have any problems. I guess my preference would be a stiff 210-240 suji, but really most of my gyutos and petties work fine. Even a 180 or smaller can get the job done just fine. I'm not sure there is a knife that is "THE" one best tool for this jo...

I only had one knife on my wishlist this year. Takamura Chromax 130mm petty. Didn't make it onto Santa's sleigh unfortunately. But I did use plenty of the knives that I already own, so I guess that's a win!

For home cooking, a 210 (or slightly longer) is really in the sweet spot. They're big enough to cut most things but don't require a ton of space.
